Main Ingredients

  • 300g Korean radish (Mu)
  • 1/2 stalk Green onion (or to taste)
  • 1000ml Anchovy-Kelp Broth (or rice water)

Seasoning

  • 1-2 Tbsp Fish sauce or Soup soy sauce (for seasoning)
  • Pinch of Salt (if needed)
  • 2 Tbsp Perilla oil

Cooking Instructions

Step 1

First, peel the radish and slice it into roughly 0.5cm thick pieces, either thinly sliced like for ‘namul’ or slightly thicker batons. Slice the green onion diagonally into about 5cm lengths. Preparing them this way helps to extract the radish’s refreshing sweetness into the broth.

Heat a pot over medium-low heat and add 2 tablespoons of perilla oil. Add the prepared radish and sauté for 2-3 minutes until the radish becomes slightly translucent and fragrant with the perilla oil. Adding about 1 teaspoon of salt at this stage helps to draw out moisture from the radish and adds a subtle depth of flavor, making the soup even more delicious.

Once the radish has softened slightly from sautéing, pour in the 1000ml of anchovy-kelp broth (or rice water). Increase the heat to high and bring the soup to a boil.

When the soup starts boiling, reduce the heat to medium and add the sliced green onions. Let it simmer for about 5 more minutes until the green onions are tender. Finally, season the soup with soup soy sauce or fish sauce. Start with 1 tablespoon, taste, and add more if needed. You can also add a pinch of salt for extra seasoning. This process results in a beautifully clear, refreshing, and flavorful radish soup!
