While spicy red soft tofu stews are delicious, sometimes you crave a comforting, clear, and mild version. This recipe is perfect for enjoying with children as it’s not spicy. It’s a satisfying meal that can be enjoyed on its own, even without rice. Let’s get started on this recipe for a light and flavorful pollack roe soft tofu stew!

Main Ingredients

  • 1 pack Soft Tofu (approx. 350g)
  • 2 strings Pollack Roe
  • 1/3 stalk Scallion (Green Onion)
  • 2 Korean Green Chilies (optional, for added spice)
  • 2 Eggs

Broth & Seasoning

  • 500ml Water
  • 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 1/2 Tbsp Salted Shrimp (for broth)
  • 1/2 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, pour 500ml of water into a pot and add 1/2 Tbsp of salted shrimp. Then, add the entire pack of soft tofu, either whole or cut into large chunks. This simple step creates a delicious broth base infused with the creaminess of tofu and the savory umami of salted shrimp, eliminating the need to boil a separate broth. This method makes it easy to achieve a flavorful foundation.

Once the broth begins to boil, add 1/2 Tbsp of minced garlic and the 2 strings of pollack roe. You can either scrape the roe from the membrane or add the strings whole. The popping roe will add a wonderful depth of flavor to the stew. Reduce the heat to medium-low and let it simmer; this will allow the pollack roe’s taste to infuse the broth beautifully.

Now, add 1 Tbsp of soy sauce for soup to season the stew. Since the pollack roe and salted shrimp are already salty, taste the broth and adjust the amount of soy sauce as needed. If it’s too bland, gradually add a little more salted shrimp or soy sauce to reach your desired flavor. The key is to maintain a clear broth color.

Finally, lightly beat the 2 eggs and drizzle them around the edges of the simmering pot. Once the eggs are cooked, turn off the heat. Garnish with chopped scallions and thinly sliced Korean green chilies if you like a bit of heat. Your clear, mild, and refreshing pollack roe soft tofu stew is ready! It’s incredibly satisfying to eat with a spoon, even without rice, and wonderfully comforting. For children, simply omit the green chilies.
