Soup Ingredients
  • 500g fresh mussels
  • 1.5L water
  • 1/2 green onion (scallion)
  • 1-2 Korean green chili peppers (cheongyang peppers)
  • Pinch of salt or soup soy sauce
  • Pinch of black pepper

Cooking Instructions

Step 1

Before cooking, it’s crucial to thoroughly clean the mussels. First, trim off the beard-like ‘byssus threads’ attached to the side of each mussel shell using scissors or a knife. Then, use a brush or the back of a knife to scrape off any dirt or barnacles from the shells. Rinse them thoroughly under cold running water multiple times. Gently scrub the shells together while rinsing for an even cleaner result.

Step 2

Place the cleaned mussels into a pot and add 1.5 liters of water. Add the green onion, sliced diagonally, and the Korean green chili peppers, also sliced diagonally. (Adjust the amount of chili peppers to your spice preference.) Bring to a boil over high heat, then reduce to medium heat. Let it simmer for about 5-7 minutes, or until the mussels open and a milky broth forms. Be careful not to overcook, as this can make the mussels tough.

Step 3

Once the mussels have all opened and the broth has developed, it’s time to season. You can add a tiny bit of soup soy sauce for extra umami, or simply use salt for a cleaner taste, according to your preference. Finish with a pinch of black pepper. Your refreshing and slightly spicy mussels soup is ready! Serve hot, and enjoy dipping the mussels in chili sauce or soy sauce if you like.
