I used to dislike beef and radish soup when I was younger, thinking it was only for special occasions like ancestral rites. But as my children grew, I started looking for clear and light soups, and beef and radish soup unexpectedly became my all-time favorite! It’s so clean and refreshing that it can easily finish a bowl of rice. Let’s learn how to make this delicious soup easily.
Main Ingredients- Beef (for soup) 200g
- Korean Radish (Mu) 1/2 medium (approx. 300-400g)
- Water 1.5L
- Soup Soy Sauce 2 Tbsp
- Minced Garlic 1 Tbsp
- Salt to taste
- Green Onion 1 handful
Cooking Instructions
Step 1
Begin by placing 1.5L of cold water and 200g of beef into a pot. Bring to a boil over high heat and simmer for about 15 minutes. This step helps to extract the deep flavor from the beef.
Step 2
During boiling, impurities (scum) may rise to the surface from the beef. To ensure a clean broth and good taste, carefully skim off these impurities using a fine-mesh sieve or a spoon. This is key to a clear and delicious soup!
Step 3
Wash the half Korean radish, peel it, and then slice it thinly into bite-sized pieces (nabak-sseolgi). This slicing method enhances the refreshing taste and texture of the soup.
Step 4
After simmering the beef for 15 minutes, add all the prepared sliced radish to the pot. Bring it back to a rolling boil over high heat. It’s important to boil until the radish becomes tender.
Step 5
Add 1 Tbsp of minced garlic to further enhance the broth’s flavor and continue simmering. Minced garlic adds a wonderful savory depth to the soup.
Step 6
First, add 2 Tbsp of soup soy sauce. Continue to simmer until the radish becomes translucent and is fully cooked. Finally, taste the soup and adjust the seasoning with salt as needed. The soup is ready when the radish is completely tender and translucent.
Step 7
Lastly, thinly slice the green onion and add it to the soup. Let it boil for a short while longer. The addition of green onion adds a refreshing aroma, completing your delicious beef and radish soup. Enjoy your meal!
