Main Ingredients- 400g Daikon Radish (about 1 piece)
- 100g Beef (brisket or shank, for soup)
- 30g Scallion (about 1/2 stalk)
- 1 Tbsp Cooking Oil
- 2 Tbsp Sesame Oil
- 8 cups Water (1600ml)
Seasoning Ingredients- 1 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
- Pinch of Black Pepper
- Salt to taste (preferably coarse sea salt)

Cooking Instructions
Step 1
First, wash the daikon radish, peel it, and then slice it into flat pieces, about 1 to 1.5 cm thick, and cut them into 3 to 4 cm squares or rectangles. Slicing them into larger pieces will help maintain their texture without them falling apart during cooking.
Step 2
Drain the blood from the beef, then slice it thinly to a similar thickness and length as the radish. Finely chop the scallions to add a fragrant aroma.
Step 3
Prepare a deep pot and add 1 tablespoon of cooking oil and 2 tablespoons of sesame oil. Heat the pot over medium heat, then add the sliced beef. Stir-fry the beef until the surfaces are cooked. It’s important to stir-fry it until the nutty aroma of sesame oil is released.
Step 4
Once the surface of the beef is somewhat cooked, add all the sliced radish to the pot and stir-fry them together.
Step 5
Continue to stir-fry the beef and radish for another 2 to 3 minutes, until the radish starts to turn translucent. This sautéing step will enhance the umami of the radish and make the soup even more refreshing.
Step 6
Pour 8 cups (1600ml) of cold water into the pot with the sautéed ingredients. Bring to a boil over high heat, then reduce the heat to medium-low. Partially cover the pot and let it simmer gently for about 30 minutes. Cook until the radish is tender and the soup has a delicious, savory flavor.
Step 7
Once the soup has developed a rich flavor, add 1 tablespoon of minced garlic and 1 tablespoon of soy sauce for soup. Taste and adjust the seasoning with coarse sea salt if needed. Using both soy sauce for soup and salt can create a deeper, more complex flavor.
Step 8
Finally, add the chopped scallions and simmer for another moment before turning off the heat. You can add a pinch of black pepper for extra aroma, if desired.
