How to Make Clear Beef and Bean Sprout Soup
Unlike the spicy version with chili powder, this clear and light beef and bean sprout soup offers a different kind of delightful flavor. It’s wonderfully comforting and perfect for all ages. This soup is especially soothing when you have a sore throat or feel under the weather; you’ll feel a warmth spread through you with every sip. It’s a healthy and gentle soup option that even children can enjoy.
Main Ingredients- Beef (for soup) 200g
- Bean sprouts 270g (about 1 handful)
- Onion 1/2 medium
- Radish 100g (thinly sliced)
Seasoning & Other Ingredients- Soy sauce for soup 1.5 Tbsp
- Perilla oil 1 Tbsp
- Minced garlic 1 Tbsp
- Dried kelp (Kombu) 1 piece (approx. 5x5cm)
- Salt 1 tsp (adjust to taste)
- Green chili pepper 1 (seeds removed, diagonally sliced, optional)
- Green onion 1/2 stalk (diagonally sliced)
- Ginger powder 0.5 tsp (or a little ginger juice)
- Soy sauce for soup 1.5 Tbsp
- Perilla oil 1 Tbsp
- Minced garlic 1 Tbsp
- Dried kelp (Kombu) 1 piece (approx. 5x5cm)
- Salt 1 tsp (adjust to taste)
- Green chili pepper 1 (seeds removed, diagonally sliced, optional)
- Green onion 1/2 stalk (diagonally sliced)
- Ginger powder 0.5 tsp (or a little ginger juice)
Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water. Thinly slice the radish into bite-sized pieces.
Step 2
Pat the beef dry with paper towels to remove excess moisture. Marinate the beef with 0.5 Tbsp of soy sauce for soup and a pinch of ginger powder (or a little ginger juice), mixing gently. Heat the perilla oil in a pot over medium heat. Add the marinated beef and sliced radish, and sauté until the beef is lightly browned on the outside.
Step 3
Once the beef and radish are somewhat cooked, add the rinsed bean sprouts. Stir gently with a spatula for about 1-2 minutes while mixing everything together. This step helps to cook off any ‘fishy’ smell from the bean sprouts, making the broth clearer and more pleasant.
Step 4
Pour in about 1 liter of water and add the piece of dried kelp. Bring the soup to a boil over high heat. Once boiling, remove the kelp and skim off any impurities that rise to the surface.
Step 5
After the soup comes to a boil, add the sliced onion, green chili pepper (if using), and green onion. Reduce the heat to medium and simmer for about 5-7 minutes. Taste the soup and adjust the seasoning with more soy sauce for soup or salt if needed. Finally, stir in the minced garlic and simmer for another minute. Your delicious clear beef and bean sprout soup is ready!
