Bean Sprout Soup Ingredients

  • 1 bag bean sprouts (approx. 200g)
  • 1/2 onion (sliced thinly)
  • 2 Korean green chili peppers (sliced diagonally)
  • A piece of radish (about 50g, thinly sliced)
  • 1L water (5 cups)
  • 3 Tbsp shrimp paste (including the liquid)
  • 1 stalk green onion (finely chopped)

Cooking Instructions

Step 1

First, rinse the bag of bean sprouts thoroughly under running water and drain them. Arrange the bean sprouts neatly in a pot.

Step 1

Step 2

Prepare the vegetables: thinly slice the 1/2 onion, slice the 2 Korean green chili peppers diagonally, and thinly slice the piece of radish.

Step 2

Step 3

Evenly place the sliced onion, diagonally sliced green chili peppers, and sliced radish on top of the bean sprouts. Placing the vegetables on top first helps prevent the bean sprouts from sticking to the bottom of the pot and makes the broth even more refreshing.

Step 3

Step 4

Carefully pour 1L of cold water into the pot. Use enough water to cover all the ingredients.

Step 4

Step 5

Add 3 tablespoons of shrimp paste. Make sure to include the liquid from the shrimp paste to enhance its savory flavor. Keep in mind that the saltiness of shrimp paste can vary, so taste and adjust the seasoning as needed.

Step 5

Step 6

Now, cover the pot with a lid and bring it to a boil over high heat. Once it starts boiling, reduce the heat to medium-low.

Step 6

Step 7

While the bean sprouts are boiling, finely chop the stalk of green onion. Adding the chopped green onion at the end will add a fragrant aroma.

Step 7

Step 8

Cover the pot and let it simmer for about 7 to 10 minutes. The clear broth will emerge as the bean sprouts cook. It’s important not to overcook to avoid a fishy smell from the bean sprouts. Finally, add the prepared chopped green onion and simmer for another moment to complete your clear and refreshing bean sprout soup!

Step 8

Step 9

There you have it – your perfectly clear and refreshing bean sprout soup is ready! Make this super simple recipe and enjoy a hearty meal. It’s also incredibly delicious with a bowl of rice!
