Hello everyone! Today, I’m sharing a super simple recipe for bean sprout soup, featuring the delightful crunchy texture of bean sprouts. On days when your meal needs a warm, comforting soup, make this clear and refreshing bean sprout soup that everyone loves for a satisfying meal. I’ll share all the tips for making it clean and free of any fishy smell!

Ingredients

  • 1 bag of bean sprouts (approx. 300g)
  • 1 stalk of green onion (mostly the white part)
  • 800ml – 1000ml of broth (anchovy or kelp based)

Seasoning

  • 1 Tbsp minced garlic
  • 1 Tbsp salted shrimp (including the brine)
  • 1.5 Tbsp soup soy sauce (Guk-ganjang)
  • Pinch of salt (to taste)
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare the broth that will add depth to your bean sprout soup. In a pot, add 800ml to 1000ml of water and boil with kelp or anchovies to create a delicious broth. (You can also use store-bought broth.)

Rinse the bean sprouts thoroughly under running water. It’s important to wash them well to avoid any fishy smell. Slice the green onion diagonally about 0.5cm thick to add a fragrant aroma.

Once the prepared broth is boiling vigorously, add the rinsed bean sprouts and cook over high heat for about 4 minutes. The key is to cook them just enough to retain their crisp texture, so they don’t become mushy!

As the bean sprouts begin to cook, it’s time to season the soup. Add 1 Tbsp of minced garlic, 1 Tbsp of salted shrimp (including its brine!), and 1.5 Tbsp of soup soy sauce. Let it simmer for another moment. At this point, taste the soup and if you find it a bit bland, add a pinch of salt to adjust the seasoning to your preference. Skim off any impurities that rise to the surface while it’s boiling to ensure a clear and clean broth.

Finally, add the sliced green onions and a pinch of black pepper. Your clear and refreshing bean sprout soup is now complete! Enjoy it with a hot bowl of rice.
