  • 2 Korean green chili peppers (Cheongyang peppers)

  • 2 tsp salt (taste salt)
  • 1/2 Tbsp soy sauce for soup
  • 1 pack seafood broth pack
  • 2 Tbsp minced garlic

First, thinly slice the green onion after washing it thoroughly. Separate the white and green parts; the white parts add a subtle sweetness to the broth, while the green parts can be used as a garnish.

Cut the Korean green chili peppers in half lengthwise and carefully remove the seeds. If you enjoy a spicier kick, you can leave some seeds in, but for a cleaner flavor, it’s best to remove them.

Finely mince the deseeded green chili peppers. Their spicy aroma will enhance the soup’s overall flavor profile.

Add the washed bean sprouts and 1 liter (L) of water to a pot. Bean sprouts release a lot of refreshing liquid, so using a generous amount of water is recommended.

Place the pot on the stove over high heat. Once the water begins to boil, add the seafood broth pack to create a flavorful base. If you don’t have a seafood broth pack, a dashi broth made with anchovies and kelp works wonderfully too.

Let the broth simmer with the pack for about 5-10 minutes until the flavors have fully infused, then remove and discard the broth pack. Removing all solids is key to achieving a clear and refreshing soup.

Once the broth is ready, add the bean sprouts. A crucial tip for preventing any ‘fishy’ smell and keeping the sprouts crisp is to cover the pot immediately after adding them.

Keep the lid on and simmer over medium heat for about 5 minutes. Be careful not to overcook the bean sprouts, as they can become mushy. Aim for a tender-crisp texture. You can lift the lid briefly to check their doneness.

Now it’s time to season the soup to perfection. Start by adding the soy sauce for soup, which adds a subtle depth and umami.

Add 1/2 tablespoon of soy sauce for soup and taste the broth. Then, use taste salt to adjust the seasoning to your preference. Using only soy sauce can sometimes make the soup look cloudy, so taste salt is a great alternative for balancing the flavor and color.
