How to Make a Clear and Refreshing Soft Tofu Stew
While spicy soft tofu stew is delicious, today I’ve prepared a mild and refreshing version that’s gentle on your stomach. This clear soft tofu stew is similar to a congee or a light bean soup but offers the comforting, melt-in-your-mouth texture of soft tofu in a more accessible way. It’s perfect for those who prefer less spicy food or for families with children. Its light and non-irritating flavor profile makes it an excellent choice for breakfast, as it’s easy to digest. Main Ingredients- 1 package soft tofu (approx. 300-400g)
- 10cm length of white part of a green onion
- 1/2 medium onion
- 1/4 small zucchini (or regular squash)
- 1/2 tbsp minced garlic (about 3 cloves)
- 1 tbsp salted shrimp
- 1000ml water (about 4 cups)
- 10 dried anchovies for broth
- 1/2 tbsp soy sauce for soup
- A pinch of black pepper
- Salt to taste (adjust based on salted shrimp)
Cooking Instructions
Step 1
Wash and prepare all the vegetables. The zucchini and onion will add a refreshing sweetness to the broth, while the garlic will enhance the overall aroma. Ensure the soft tofu is ready to be cooked into a smooth stew.
Step 2
Slice the zucchini into about 0.5cm thick half-moons or bite-sized pieces. Slice the onion into thin strips or roughly chop it. Chop the white part of the green onion into about 0.5cm diagonal pieces. Mince the garlic finely. Cutting the vegetables into similar sizes will ensure they cook evenly.
Step 3
Pour 1000ml of water into a pot and add 10 dried anchovies for broth. Bring to a boil over medium heat. Once boiling, remove the anchovies. Add the sliced onion and zucchini to the pot and continue to simmer. Cooking until the vegetables become translucent will make the broth even more refreshing.
Step 4
Once the broth is boiling, add 1 tablespoon of salted shrimp to season. Salted shrimp adds a savory depth and richness to the broth. You can substitute with salt, but the unique refreshing taste of salted shrimp pairs wonderfully with this clear soft tofu stew.
Step 5
Add 1/2 tablespoon of soy sauce for soup to give the stew color and enhance its savory flavor. This soy sauce will elevate the overall taste profile of the stew.

Sprinkle in a pinch of black pepper to remove any unwanted odors and add a subtle aroma. Adjust the amount of black pepper to your preference.

Finally, adjust the seasoning with salt. Since the salted shrimp already provides saltiness, add salt gradually to reach your desired taste. Be careful not to make it too salty.

Carefully open the package of soft tofu. Using a spoon or knife, break the tofu into large, bite-sized pieces. Cutting it too small can cause it to break apart too much, so larger chunks will help maintain its soft texture.
Step 9
Gently add the cut soft tofu into the pot. It’s important to add it carefully to prevent it from crumbling.
Step 10
Lastly, add the chopped green onions and continue to simmer over medium heat for another 2-3 minutes. Cook just until the soft tofu is heated through and the broth slightly thickens. Avoid overcooking, as it can make the tofu mushy.
