Main Ingredients- 1 whole fresh Cod, cleaned
- 100g Mixed seafood (shrimp, clams, etc. – optional)
- 40g Korean radish (Muu), cut into thick slices
- 40g Soybean sprouts (Kongnamul)
- 20g Korean water parsley (Minari)
- 1/2 Red chili pepper
Cooking Instructions
Step 1
1. Prepare all ingredients meticulously. Clean the cod thoroughly and chop the vegetables into appropriate sizes. For the radish, it’s best to cut it a bit thickly to allow for longer simmering and deeper flavor.

2. Rinse the cod under running water to remove any impurities, then let it drain well on a colander. This step ensures a cleaner and more refreshing taste for your soup.

3. Slice the Korean radish into substantial pieces. Thicker slices will break down and meld into the broth, adding sweetness and a tender texture. Simmering them well is key to a flavorful soup.

4. In a pot, lightly toast the dried pollack (or dried anchovies) and dried shrimp over low heat to remove any fishy odor. Then, add 1.2 liters of water and bring it to a boil over high heat.

5. Once the broth boils, reduce the heat to medium and simmer for at least 15 minutes, or until the water has reduced by about half. Add the thickly sliced radish and continue to boil for about 10 minutes until the radish becomes translucent.

6. After the broth and radish have cooked sufficiently, carefully place the cleaned cod pieces into the pot. Cod cooks relatively quickly, so avoid overcooking to maintain its delicate texture.

7. As the cod begins to cook, stir in 2 tablespoons of gochugaru (chili flakes) and 2 tablespoons of soy sauce (Guk-ganjang or Jin-ganjang). This adds a wonderful depth of flavor and a pleasant spiciness to the broth. Adjust the seasoning to your preference.

8. Finally, add 1 tablespoon of minced garlic, the soybean sprouts, sliced red chili pepper, and the aromatic Korean water parsley.
