Dumpling Soup Ingredients- 10-12 dumplings (your favorite kind)

- 3 Tbsp soup soy sauce (adjust to taste)

Cooking Instructions
Step 1
Prepare all the ingredients for the dumpling soup. Make egg crepes, rehydrate dried shiitake mushrooms if using, or thinly slice fresh ones. Chop the green onions.
Step 2
Make a deep and refreshing anchovy broth. In a pot, combine 1.3L of water, 2 pieces of dried kelp, 2/3 of an onion, 1 Cheongyang chili pepper, and a handful of dried pollack skin. Bring to a boil over high heat for 5 minutes, then reduce to medium heat and simmer for 10 minutes. Skim off any foam that rises to the surface during simmering. After 15 minutes, add a handful of dried anchovies and simmer for another 5 minutes over medium heat. Finally, remove and discard all the solids to obtain 1L of clear broth. (Tip: To reduce any fishy smell and enhance the umami flavor, you can lightly stir-fry the anchovies over high heat for 2 minutes before adding water.)
Step 3
Steam the dumplings. Bring water to a boil in a steamer. Place the dumplings inside, cover, and steam for about 5-7 minutes until cooked through. (Tip: Steaming the dumplings keeps the broth clear and results in a softer texture. Pan-frying or boiling them is also acceptable.)
Step 4
Whisk 1 egg well and pour it into a lightly oiled pan to make a thin egg crepe. Once cooled, slice it into diamond shapes or thin strips to use as a garnish.
Step 5
Pour the prepared 1L of anchovy broth into a pot. Add 3 Tbsp of soup soy sauce and 1/2 Tbsp of minced garlic. Bring to a simmer over medium-high heat for 3-4 minutes to create the flavorful broth base. Taste and add more soup soy sauce if needed.
Step 6
Arrange the steamed dumplings attractively in a serving bowl. Ladle the freshly simmered anchovy broth over them. Garnish with the prepared egg crepes, thinly sliced shiitake mushrooms, and chopped green onions.
