Clean and Savory Tofu Noodles with Seaweed
Perfect for Chilly Weather: Heartwarming Tofu Noodles with Seaweed
As the weather suddenly turns cold, these warm tofu noodles are the perfect comforting dish. We’ve added seaweed (maesaengi) for an exceptionally clean and savory flavor. This recipe uses dried seaweed blocks, making it super convenient, though fresh seaweed works wonderfully too. With a rich anchovy broth ready, a simple yet delicious tofu noodle soup is complete. Its mild taste makes it a delightful dish for all ages.
Ingredients- Anchovy Broth 400ml (Refer to recipe: @6878126)
- Somen Noodles 100g
- Dried Seaweed (Maesaengi) 2g (1 block)
- Tofu 1/2 block (approx. 150g)
- Fish Sauce or Soy Sauce for Seasoning 1/2 Tbsp
Cooking Instructions
Step 1
First, prepare your delicious anchovy broth. (For detailed instructions on making anchovy broth, you can refer to the recipe @6878126!) Cut the tofu into bite-sized cubes, about 2cm in size.
Step 2
Nowadays, dried seaweed comes conveniently in block form. If you’re using fresh seaweed, rinse it thoroughly under running water multiple times and squeeze out any excess moisture before using. (About half a handful for fresh seaweed.)
Step 3
Boil the somen noodles in plenty of water until cooked. Rinse the cooked noodles under cold water.
Step 4
Tip for perfectly boiled noodles: When the water starts to boil over while cooking the somen, add a little cold water. Repeat this 2-3 times, and your noodles will be delightfully chewy and firm. When rinsing under cold water, rub the noodles with both hands until the water runs clear to prevent them from becoming soggy.
Step 5
Once the anchovy broth is at a rolling boil, add the cubed tofu and let it simmer gently for a short while until the tofu is tender.
Step 6
Now it’s time to add the fragrant seaweed. Crumble the dried seaweed block into the broth, or add the fresh seaweed directly.
Step 7
Once the seaweed has softened and dispersed in the broth, add the pre-boiled somen noodles and bring to a gentle simmer. Let it cook briefly so the noodles absorb the broth’s flavor.
Step 8
Finally, season the soup with fish sauce or soy sauce to taste. This adds a wonderful depth of savory flavor.
