Classic Street Toast: Made in One Pan!

Are you looking for a simple yet satisfying breakfast on busy weekdays or relaxed weekends? Today, I’m sharing a recipe for ‘One-Pan Street Toast’ that you can easily make with just a frying pan. Recreate the nostalgic taste of the toast you used to buy near the arcade in your childhood, right at home!

Key Ingredients

  • 1 slice of bread
  • 2 eggs
  • 1/2 handful of cabbage (approx. 30g)
  • 10cm green onion (white part preferred)
  • 10g unsalted butter
  • 1/2 Tbsp sugar
  • Ketchup, to taste

Cooking Instructions

Step 1

First, prepare the vegetables. Finely chop the green onion and shred or finely mince the cabbage. About half a handful of the prepared vegetables is ideal. You can use the bread whole or cut it in half into two pieces. (Adjust the size to your preference.)

Crack 2 fresh eggs into a bowl. Use a fork or whisk to beat the yolks and whites together until well combined, creating a smooth egg mixture.

Add the chopped green onion and shredded cabbage to the beaten eggs. Mix thoroughly so that the vegetables are evenly distributed within the egg mixture. This will result in a delicious egg batter packed with vegetables.

Gently heat a frying pan over low heat. Once the pan is warm, add half of the 10g of butter and let it melt. Be careful not to burn the butter by controlling the heat.

Once the butter has melted and coated the pan, pour the vegetable-egg mixture evenly into the pan. Spread it out so it covers the pan up to the edges.

After pouring the egg mixture, wait for about 10 seconds, then carefully place the slice of bread on top. Placing the bread when the egg is just beginning to set will help it adhere well.

When the egg mixture is almost cooked through at the bottom and the edges are starting to set, carefully flip the toast using a spatula or chopsticks. Cook for a little longer until the bread side is golden brown.

While the bread side is cooking, use a spatula to fold any excess egg that has spilled over the edges of the bread onto the bread itself, creating a neat edge. Now, add the remaining half of the butter to the pan, and toast the bottom side of the bread (which is now facing down) in the butter until golden brown. This will add a delightful crispiness.

Once the bottom of the bread is nicely browned and looks appetizing, reduce the heat to very low. Sprinkle 1/2 Tbsp of sugar evenly over the cooked egg side, and drizzle ketchup to your liking. The combination of sweet and tangy flavors is what makes street toast so special!

The heat from the bread will cause the sugar to melt slightly. At this point, carefully fold the toast in half to complete your nostalgic street toast! It tastes best when enjoyed warm.
