Ingredients

  • 140g Butter (unsalted recommended)
  • 6 Tbsp Grated Parmesan Cheese (use high-quality for richer flavor)
  • 2.5 Servings Fettuccine Pasta (approx. 250g)
  • 1 tsp Minced Garlic (optional, for a Korean palate twist)
  • 1 tsp Dried Parsley (for garnish)
  • 1 piece Sun-dried Tomato in oil (optional, for added flavor)

Cooking Instructions

Step 1

The soul of Alfredo pasta lies in its three core ingredients: wide fettuccine noodles, luscious butter, and savory Parmesan cheese. With just these, you can create a magnificent pasta dish.

Step 1

Step 2

In a wide pan, melt 140g of butter over medium-low heat. Add 1 tsp of minced garlic. *Authentic Roman Alfredo pasta does not include garlic, but we’ve added a touch for a subtle aromatic note that appeals to Korean tastes. Be careful not to brown the garlic too much.*

Step 2

Step 3

As the butter begins to melt, start boiling water in a separate pot to cook the fettuccine. Lightly salt the pasta water for seasoning. Once the butter is melted and fragrant, have your pasta ready to add.

Step 3

Step 4

Once the water boils, add the fettuccine pasta and cook it for 1-2 minutes less than the package instructions recommend, aiming for an al dente texture. While the pasta cooks, carefully drain it and transfer it directly into the pan with the melted butter to toss and coat.

Step 4

Step 5

Toss the fettuccine noodles vigorously in the pan with the melted butter until each strand is evenly coated and glossy. If the sauce seems too dry, add a little more melted butter to ensure the pasta remains moist and luscious. Once the pasta is well-coated with butter, turn off the heat.

Step 5

Step 6

Without letting the butter cool or solidify, quickly transfer the pasta onto a serving plate, piling it high. Serving the hot pasta immediately helps maintain its delightful texture.

Step 6

Step 7

Generously sprinkle 6 Tbsp of grated Parmesan cheese over the warm pasta. If you have a block of Parmesan, grating it fresh will enhance the flavor even further. The key here is to quickly mix the cheese with the hot pasta and butter using tongs or a fork, allowing the heat to melt the cheese into a creamy sauce. *No additional salt is needed; the Parmesan cheese and butter provide sufficient seasoning.*

Step 7

Step 8

Once the Parmesan cheese is evenly incorporated, creating a creamy consistency, sprinkle with 1 tsp of dried parsley for a touch of color. Place one piece of sun-dried tomato in the center as a garnish. Your authentic Roman-style Alfredo pasta is now ready! If the pasta appears too dry, you can melt a little extra butter (a quick 5-second microwave zap works wonders) or drizzle a touch of olive oil. Enjoy the taste of Rome at home!
