Classic Pork Curry Recipe
Making Delicious, Original Pork Curry Anytime
One of my favorite dishes is curry! Today, I made pork curry with an original flavor. It’s not difficult and can be cooked quickly.
Ingredients- 1 potato
- 1 onion
- 1/3 carrot
- 100g pork (for curry, cut into bite-sized pieces)
- 1 Tbsp cooking wine or sake
- 500ml water
- Pinch of black pepper
- 2 Tbsp cooking oil
- 2 blocks of solid curry roux (or approx. 50-60g curry powder)
- 2 bowls of rice
Cooking Instructions
Step 1
First, let’s prepare the potatoes, a key vegetable for curry. Peel one medium-sized potato and cut it into roughly 2cm cubes. Be careful not to cut them too large, as this will increase cooking time. Aim for uniform-sized pieces.
Step 2
Next, prepare one onion. Wash and peel the onion, then dice it into cubes of about 2cm, similar in size to the potatoes. Caramelizing onions brings out a natural sweetness that enhances the curry’s flavor.
Step 3
Prepare about 1/3 of a carrot. Peel the carrot and dice it into cubes, matching the size of the other vegetables. Carrots add a lovely color and nutritional boost to the curry.
Step 4
Now, it’s time to sauté the pork. Add 100g of curry-cut pork to a pot. To eliminate any gamey smell, add 1 tablespoon of cooking wine or sake. Then, add about 1 tablespoon of cooking oil and stir-fry the pork over high heat until it’s nicely browned.
Step 5
To further enhance the flavor and remove any residual odors, sprinkle a pinch of black pepper over the pork while stir-frying. Keep stirring to prevent the pork from sticking to the bottom of the pot.
Step 6
Once the pork is cooked through, add all the diced potatoes, onions, and carrots to the pot. Add another tablespoon of cooking oil and stir-fry the vegetables over high heat for about 1-2 minutes, until they start to look slightly translucent. Sautéing the vegetables first brings out their natural sweetness and improves their texture.
Step 7
After sautéing the vegetables, pour in 500ml of water. Bring the water to a boil, then reduce the heat to medium-low. Simmer for about 10-15 minutes, or until the potatoes are tender when pierced with a fork. Skim off any foam that rises to the surface for a clearer broth.
Step 8
When the potatoes are cooked, turn off the heat or reduce it to very low. Add 2 blocks of solid curry roux. Stir gently with a spoon or whisk until the curry roux is completely dissolved. Once dissolved, turn the heat back on and simmer for another minute or two until the curry thickens to your desired consistency.
Step 9
Ladle the deliciously cooked pork curry generously over a bowl of hot rice.
