Classic Old-Fashioned Toast

Toast Ingredients- 4 slices of bread
- 1 leaf of cabbage (about 1/4 of a small head)
- A small piece of carrot (about 1/4)
- A small piece of onion (about 1/4)
- 2 eggs
- 2 slices of cheese
- 2 slices of ham
- Mayonnaise, to taste
- Ketchup, to taste
- Salt, a pinch
- 1 teaspoon brown sugar
- 1 tablespoon butter
Cooking Instructions
Step 1
First, prepare the vegetables. Wash the cabbage leaf thoroughly and pat it dry or use paper towels. Finely shred the cabbage, carrot, and onion. It’s best to shred them thinly to maintain a pleasant texture.
Step 2
In a large bowl, combine the shredded cabbage, carrot, and onion. Crack in the 2 eggs. Add a pinch of salt and about 1 teaspoon of brown sugar for a touch of sweetness. Use chopsticks to beat the eggs and mix everything together evenly.
Step 3
Heat a frying pan over medium heat and melt 1 tablespoon of butter. Once the butter is melted, ladle about half of the cabbage and egg mixture into the pan, forming a round shape for one ‘pancake.’ Repeat to make a second one. Aim for a relatively thin layer so it cooks through evenly.
Step 4
Cook the vegetable omelets over medium-low heat. Once one side is golden brown, carefully flip it using a spatula. Cook the other side until it’s also golden brown. These will be the filling for your toast.
Step 5
Remove the cooked omelets from the pan and set them aside on a plate. Wipe the pan clean with paper towels, then add a little more butter. Place the slices of bread in the pan and toast them over medium-low heat until golden brown on both sides. Crispy toast adds a wonderful texture.
Step 6
Arrange the toasted bread slices on a plate. Wipe the pan again and heat it over medium heat. Place the ham slices in the dry pan and lightly grill them on both sides for just a minute or two. Be careful not to overcook the ham, as it can become tough.
Step 7
Spread a generous layer of mayonnaise evenly on one side of two toast slices. On top of the mayonnaise, place one slice of cheese, followed by the grilled ham. Finally, carefully place one of the vegetable omelets on top of the ham.
Step 8
Drizzle ketchup in a zigzag pattern over the vegetable omelet. Sprinkle about 1 teaspoon of brown sugar evenly over the ketchup for an extra touch of sweetness. Then, place the other mayonnaise-spread toast slice on top to complete the sandwich.
Step 9
Repeat the process to make a second toast. Once both toasts are assembled, use a bread knife to carefully cut them in half diagonally. Enjoy your delicious old-fashioned street toast while it’s warm!
