Classic Ham and Egg Fried Rice
Easy and Delicious Ham and Egg Fried Rice Recipe
I just made this recipe with what I had on hand, and my family absolutely loved it, so I’m sharing it! It’s a simple yet incredibly satisfying dish.
Ingredients- 2 bowls of cooked rice (warm)
- 2-3 fresh eggs
- 1/4 carrot
- 1/4 onion
- 2-8 pieces of chopped green onion (to taste)
- 1 piece of ham
- 2 pinches of salt
- Cooking oil, as needed
Cooking Instructions
Step 1
First, briefly blanch the ham in boiling water. This helps to remove any excess fat and impurities, resulting in a cleaner flavor. Blanch for about 1 minute, then remove and let it cool slightly.
Step 2
Crack the eggs into a bowl. Remove the chalazae (the white strings) and whisk them thoroughly with a fork or whisk until well beaten. Add a pinch of salt and mix; this prevents the eggs from clumping and ensures they cook evenly.
Step 3
Once the blanched ham has cooled a bit, dice it into small, bite-sized pieces (about 0.5 cm cubes). Finely mince the carrot and onion as well, aiming for a similar size to the ham. Chop the green onions and set them aside for later.
Step 4
Heat a frying pan over medium heat and add a generous amount of cooking oil. Add the cooked rice to the pan. Use a spatula to break up any clumps of rice and stir-fry for 2-3 minutes, ensuring the rice grains are separated and become fluffy. It’s crucial to break up the rice well to prevent it from sticking.
Step 5
Push the fried rice to one side of the pan. Pour the beaten egg mixture into the empty space. As the egg begins to set and form soft curds, gently mix it with the rice, coating each grain with egg. This technique helps to keep the rice loose and creates a wonderfully tender texture.
Step 6
Now, add the diced ham, carrots, and onions to the pan. Stir everything together and continue to cook until all the ingredients are well combined and the vegetables are slightly softened.
Step 7
Finally, add the chopped green onions and season with 2 pinches of salt. (Alternatively, you can add about 1/2 teaspoon of soy sauce for extra flavor).
Step 8
Continue to stir-fry for another 1-2 minutes, ensuring all ingredients are heated through and the vegetables are tender. Keep the heat at medium and stir constantly to prevent burning.
Step 9
Serve the warm ham and egg fried rice on a plate. For a classic touch and a hint of sweetness, drizzle some ketchup in a zigzag pattern over the top. Enjoy your delicious homemade fried rice!
