Authentic American Chocolate Chip Cookies with Secrets from the Culinary Institute of America
Let’s bake the perfect chocolate chip cookies using a secret recipe from the world-renowned Culinary Institute of America (CIA)! These cookies boast a delightful crisp exterior and a wonderfully chewy interior. They are the ultimate treat to enjoy with a cup of coffee or a glass of milk.
Ingredients- 450g All-purpose flour
- 3/4 tsp Baking soda
- 1/2 tsp Salt
- 2 Large fresh eggs
- 2 tsp Vanilla oil or extract
- 225g Unsalted butter, softened to room temperature
- 100g Granulated sugar
- 100g Brown sugar
- 30g Dark chocolate chips
- 30g Dried cherries
Cooking Instructions
Step 1
In a large bowl, cream the softened butter until it reaches a mayonnaise-like consistency. Gradually add the granulated sugar and brown sugar in two additions, whipping thoroughly until the sugar is dissolved and the mixture becomes light and fluffy, resembling pale ivory in color. This creaming process is crucial for achieving the perfect cookie texture.
Step 2
Add the eggs one at a time, beating well after each addition until fully incorporated and the mixture is smooth. Ensuring each egg is well blended prevents the dough from separating.
Step 3
Your butter mixture is perfectly creamed when it’s smooth and uniform. Be careful not to under-cream (leading to hard cookies) or over-cream (causing the cookies to spread too much). The butter should start to cling slightly to the bottom of the bowl, and the mixture should lighten in color as it incorporates air, indicating successful creaming.
Step 4
In a separate bowl, sift together the all-purpose flour, baking soda, and salt. Sifting aerates the dry ingredients and prevents lumps, contributing to a tender cookie. Add the sifted dry ingredients to the creamed butter mixture. Gently fold them in using a spatula until just combined; avoid overmixing, as this can develop gluten and result in tough cookies. Finally, stir in the chocolate chips and dried cherries until evenly distributed.
Step 5
Scoop approximately 45g portions of dough and gently roll them into balls. Place the dough balls on a baking sheet lined with parchment paper, ensuring they are spaced apart. Flatten each ball slightly with your palm or the bottom of a glass to about 1.5-2 cm thickness. This shape helps the cookies spread evenly while baking. Bake in a preheated oven at 170-180°C (340-350°F) for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious homemade chocolate chip cookies!
