Essential Ingredients- 30g clam meat (purged and cleaned)
- 20g butter
- 50g mozzarella cheese
- 1 Tbsp sugar
- 1/2 Tbsp basil pesto
- 10g minced garlic
Cooking Instructions
Step 1
First, place the clams in a bowl with saltwater and let them purge for at least 1 hour. Purging them in lightly salted water helps them expel any sand or impurities, ensuring a cleaner taste.
Step 2
Once purged, place the clams in boiling water and blanch them briefly. After cooking, rinse them under running water to clean the shells thoroughly.
Step 3
Carefully separate the clam meat from the shells. Gently squeeze out any excess water from the clam meat; this prevents the mixture from becoming watery when sautéed and helps maintain the natural flavor of the clams.
Step 4
Slice the baguette into approximately 3cm thick pieces at an angle. This angled cut helps the canapés remain stable when topped with the filling.
Step 5
Melt the butter in a preheated pan over medium heat. Immediately add the sugar, basil pesto, minced garlic, and the drained clam meat. Sauté quickly, stirring constantly to prevent burning. This process creates a flavorful sauce where the essence of the clams blends with the aromatic basil and garlic.
Step 6
Spread a thin layer of the sautéed clam and basil mixture onto each slice of baguette. Then, artfully arrange the sautéed clams on top of the spread.
Step 7
Generously sprinkle mozzarella cheese over the clams on each baguette slice. Heat in a microwave for about 2 minutes until the cheese is melted and bubbly, or bake in a preheated oven for approximately 2 minutes until golden brown. Serve immediately while warm for the best taste.
