Chive and Smoked Duck Kimchi Jeon Rolls
Healthy and Delicious Chive, Smoked Duck, and Kimchi Jeon Rolls Recipe
This is a special jeon (Korean pancake) recipe featuring a crispy chive pancake topped with stir-fried kimchi and smoked duck. Cut into bite-sized pieces and rolled with chopsticks for an enhanced dining experience. The smoked duck and kimchi are finely chopped and lightly stir-fried in duck oil to enhance their flavors. The chive pancake batter is enriched with fresh chives, crunchy cabbage, and fragrant green onions for texture and taste. Feel free to substitute with other vegetables you have at home. This dish is spicy yet not greasy, and packed with protein, making it a healthy choice for the whole family. This generous meal was enjoyed by my son (two pieces), myself (one piece), and one piece was saved for Dad.
Jeon Ingredients- 1 bunch chives (approx. 50g)
- 1 bunch cabbage (approx. 50g)
- 1/3 green onion
- A little red bell pepper
- 1 bunch shredded kimchi (approx. 50g)
- 1 bunch smoked duck meat (approx. 50g)
- 16-17 Tbsp pancake mix (buchim garu)

Cooking Instructions
Step 1
First, prepare the vegetables for the jeon. Wash the chives and cut them into 2cm lengths. Shred the cabbage; cutting it circularly will result in finer shreds. Separate any clumped cabbage with your hands and place them in the batter bowl. Cut the green onion in half lengthwise and then shred it thinly.
Step 2
Now, let’s make the jeon batter. In the batter bowl, add 8 heaping tablespoons of pancake mix. Pour in 2 cups of water that has been infused with dried kelp, dates, and green onion roots. (Plain water is also fine.) Mix well with chopsticks or a whisk until there are no lumps and the consistency is right. If it’s too thin, add more pancake mix; if it’s too thick, add a little water until you reach the desired consistency.
Step 3
Heat a non-stick pan with a generous amount of oil over medium heat. Use a ladle to spread the batter thinly onto the pan, then press down gently with the back of a spoon as it cooks. Once the center begins to cook, artfully arrange finely chopped red bell pepper on top for decoration. Lightly press down with a bit more uncooked batter in the center. When the edges are golden brown, carefully lift the cooked batter with a spoon and flip it using a spatula. Press down again and cook until golden brown on both sides. When serving, place the jeon on a plate with the bell pepper side facing up.
Step 4
Finely chop the kimchi. Also, finely chop the smoked duck meat into bite-sized pieces.
Step 5
In a pan with a little duck oil, add the chopped kimchi and smoked duck. Stir-fry them together over medium-low heat. The savory flavor of the duck oil will infuse into the kimchi and duck, making them even more delicious. Stir-fry just until the ingredients are cooked through, avoiding overcooking.
Step 6
Generously spread the stir-fried kimchi and smoked duck over the warm chive jeon. Cut the jeon into manageable portions (about 3-4 cuts) and roll them up with chopsticks to eat. If you have any leftover jeon, you can stack two pieces, cut them with scissors, store them in an airtight container in the refrigerator, and reheat them in the microwave later for a meal that’s almost as good as fresh.
