Crafting a Chipotle Burrito with ‘Goyang Giwaji No. 1’ Rice for an Irresistible Chew
Before the pandemic, my husband and I watched an episode of ‘Will It Sell in Korea?’ set in America, which led to a wonderful trip. During that trip, we grabbed some takeout burritos from Chipotle and enjoyed them while watching a game at the LA Dodgers stadium. Recently, I’ve been rewatching that episode, and it brought back such strong cravings for that specific burrito! So, I decided to recreate it at home. Experience the perfect harmony of chewy rice, fresh vegetables, and the sweet and spicy chipotle sauce!
Burrito Fillings- 2 large flour tortillas
- 200g cooked rice (preferably firm and chewy)
- 1/4 yellow bell pepper
- 1/4 orange bell pepper
- 1/2 cucumber
- 30g cooked chickpeas
- 30g canned corn kernels
- 30g canned kidney beans
- 100g chicken breast
- 30g fresh lettuce
- 50g chipotle sauce
Fresh Salad Dressing- 3 Tbsp olive oil
- 3 Tbsp fresh lemon juice
- 1/2 tsp dried oregano
- 1/2 tsp sesame oil
- Pinch of black pepper
- 3 Tbsp olive oil

Cooking Instructions
Step 1
Begin by preparing all the ingredients for your burrito, ensuring they are fresh and ready to assemble.

Cook the ‘Goyang Giwaji No. 1’ rice, known for its excellent chewiness and texture. Cook it until it’s fluffy and the grains are distinct. Using warm, freshly cooked rice will enhance the flavor and texture.

For the cucumber, first remove the seedy core, then dice it into small, uniform cubes to maintain a pleasant crunch.

Dice the yellow and orange bell peppers into similar-sized cubes as the cucumber. This adds a vibrant splash of color, making your burrito visually appealing.

Wash the fresh lettuce thoroughly and pat it completely dry. Then, thinly shred it. Removing excess moisture is crucial to prevent the burrito from becoming soggy and to keep the lettuce crisp.

In a medium-sized bowl, combine the diced cucumber and bell peppers, cooked chickpeas, canned kidney beans, and corn kernels. Now, let’s prepare a delicious dressing for these fresh ingredients.

Lay out a large tortilla flat. Spread about half of the chipotle-seasoned rice (approximately 100g) evenly over the tortilla, leaving a small border around the edges. Avoid piling the rice too high, as this can make rolling difficult and cause the burrito to burst.

Arrange 50g of the prepared chicken breast on top of the rice. You can use pre-boiled or pan-seared chicken breast for convenience and flavor.
