Chilled Tteokbokki: A Refreshing Summer Delight

Main Ingredients
  • Tteokbokki rice cakes 2 measuring cups (approx. 300g)
  • Crisp bean sprouts 1 handful (approx. 50g)
  • 1/4 fresh onion
  • 1/3 crisp cucumber
  • 1 handful fragrant chives (approx. 30g)

Seasoning Sauce
  • 2 Tbsp commercial gochujang (chili paste)
  • 1 Tbsp soy sauce
  • 2 Tbsp oligosaccharide (or corn syrup)
  • 2 Tbsp vinegar
  • 1 Tbsp gochugaru (chili powder)
  • 1/2 Tbsp sugar (adjust sweetness to taste)
  • 1/3 Tbsp minced garlic (optional)

Cooking Instructions

Step 1

First, rinse the bean sprouts thoroughly under running water. Place them in boiling water and cook, covered, for about 4 minutes. Be careful not to overcook them until they become too soft. Immediately after cooking, rinse the bean sprouts in cold water to cool them down and drain any excess water.

Step 2

Peel the onion and thinly slice it into strips about 0.3cm thick. Slice the cucumber into similar thickness and length as the onion. Wash the chives, drain them, and cut them into lengths similar to the tteokbokki rice cakes, about 3-4cm long.

Step 3

Rinse the tteokbokki rice cakes in water. Heat a generous amount of cooking oil in a pan over medium-low heat. Add the rice cakes and fry them until lightly golden brown on the outside. This step makes the rice cakes chewier and adds a nutty flavor. Fry for about 1-2 minutes, being careful not to burn them.

Step 4

In a bowl, combine all the seasoning sauce ingredients: gochujang, soy sauce, oligosaccharide, vinegar, gochugaru, sugar, and minced garlic. Mix them well with a spoon until you have a delicious, well-blended sauce. You can adjust the ratio of the ingredients to suit your preference.

Step 5

In a large bowl, add the blanched bean sprouts, sliced onion and cucumber, and the cut chives. Pour the prepared seasoning sauce over the ingredients. Gently mix everything together with your hands, like you’re tossing a salad, ensuring the sauce coats all the ingredients evenly without mashing the vegetables.

Step 6

Finally, add the fried tteokbokki rice cakes to the bowl and gently mix them with the vegetables and sauce once more. Once everything is well combined, your visually appealing and delicious chilled tteokbokki is ready! Serve immediately and enjoy the refreshing taste.
