Main Ingredients- 2 servings of Somyeon noodles (approx. 200g)
- 1 handful of well-fermented kimchi (approx. 150g)
- 1 tsp minced garlic
- 1/2 cup anchovy sauce (approx. 100ml)
- 1/2 cup soy sauce for soup (approx. 100ml)
- Pinch of black pepper
- 2 eggs
- 1 tsp sugar
- 1 tsp red pepper flakes (gochugaru)
- 1 tsp toasted sesame seeds
- 1 tsp sesame oil (optional, for kimchi seasoning)

Step 1
Today, we’ll make a delicious Kimchi Mari Guksu using just the kimchi from your refrigerator! It’s a delightful dish perfect for when you lose your appetite, especially during the hot summer months.
Step 2
First, let’s prepare the refreshing broth. In a pot, combine 600ml of water with 1/2 cup of anchovy sauce, 1/2 cup of soy sauce for soup, 1 tsp of minced garlic, and a pinch of black pepper. Bring it to a boil over medium heat, then reduce the heat and simmer for about 5 minutes. This will create a savory broth. Allow the broth to cool completely, preferably in the refrigerator.
Step 3
Finely chop the kimchi. If the kimchi has a lot of juice, it might make the broth too salty, so it’s best to gently squeeze out some of the excess juice from the kimchi before proceeding. Place the squeezed kimchi in a bowl and season it with 1 tsp of sugar, 1 tsp of red pepper flakes, 1 tsp of toasted sesame seeds, and optionally, 1 tsp of sesame oil. Gently mix everything together. This will make the kimchi even more flavorful.
Step 4
Boil the somyeon noodles in plenty of water. Stir occasionally to prevent them from sticking together. Once the noodles are cooked to your liking, drain them and quickly rinse under cold water to remove excess starch. Drain them thoroughly. For the topping, you can make a thin omelet and slice it, or hard-boil the eggs, peel them, and slice them. (You can also add thinly sliced cucumber or pickled radish if you like.)

Finally, place the cooked somyeon noodles in a serving bowl. Pour the chilled broth over the noodles. Top with the seasoned kimchi and the prepared egg garnish. Your refreshing, tangy, and delicious Kimchi Mari Guksu is now complete! It’s perfect for slurping down when you need a flavorful meal.
