  • 1 pack (320g) store-bought cold noodle broth
  • Cold water, same amount as the broth (320ml)
  • 100g well-fermented kimchi
  • 1/4 cucumber
  • 1 ladleful (approx. 50ml) kimchi brine

Kimchi Seasoning

  • 1 tsp sugar
  • 1 tsp sesame oil

Cooking Instructions

Step 1

First, prepare 1 pack (320g) of store-bought cold noodle broth. Pour the broth into a bowl, and add the same amount of cold water (320ml). This 1:1 ratio ensures the perfect seasoning for a delicious soup.

Next, add 1 ladleful (about 50ml) of kimchi brine. To ensure a clean taste, use a sieve to strain out the kimchi solids and add only the clear liquid.

Finely chop the well-fermented kimchi into bite-sized pieces. The more fermented the kimchi, the deeper and more flavorful the broth will be.

In a separate bowl, gently mix the chopped kimchi with 1 teaspoon of sugar and 1 teaspoon of sesame oil. The sugar helps balance the acidity of the kimchi, while the sesame oil adds a nutty aroma.

Wash the cucumber, remove the seeds, and cut it into thin matchsticks. The crisp texture of the cucumber will add a delightful contrast to the dish.
