On these hot and humid days, nothing beats a refreshing bowl of chilled udon! Today, we’re making Bukkake Udon using mentsuyu (Japanese dipping sauce) for a burst of savory flavor. It’s incredibly easy to make and perfect for a quick, cool meal.

Prepare the toppings by thinly slicing about 2 to 3 stalks of green onions (or scallions). Wash them thoroughly and slice them finely. This will add a fresh, mild onion flavor and a nice visual touch to your finished dish.

Bring a generous pot of water to a rolling boil. Add the udon noodles and cook for about 3 to 5 minutes, or according to the package instructions. Stir occasionally to prevent the noodles from sticking together.

Once the udon noodles are cooked, drain them thoroughly in a colander. Immediately rinse them under cold running water. This rinsing step is crucial for achieving that delightfully chewy and firm texture, and it cools the noodles down perfectly for a chilled dish.

Now, let’s make the refreshing Bukkake sauce. In a bowl, combine 100ml of mentsuyu with 200ml of water. This creates a 1:2 ratio of mentsuyu to water. You can adjust the water amount slightly depending on the saltiness and flavor intensity of your mentsuyu to find your perfect balance.

We’ll make a delicate onsen tamago (soft-cooked egg) to top the udon. Crack one egg into a microwave-safe bowl. Using a fork, gently pierce the yolk a couple of times. This helps prevent the egg from exploding when heated.

Carefully pour water into the bowl, ensuring the egg is fully submerged. Be gentle to avoid mixing the yolk and white. This careful addition of water helps maintain the beautiful shape of the onsen tamago.

Cover the bowl with a microwave-safe lid or plastic wrap (pierce a few holes in the wrap). Microwave on high for approximately 45 seconds. I recommend heating for 30 seconds, checking the egg’s doneness, and then microwaving for an additional 15 seconds if needed. Cooking in stages prevents overcooking and ensures a perfectly runny yolk.

Assemble your Bukkake Udon. Place the chilled udon noodles in a serving bowl. Add about a small handful of katsuobushi per serving. Gently place the poached egg on top. Then, generously sprinkle with the sliced green onions and shredded nori.

Pour the prepared mentsuyu sauce over the noodles. Make sure the sauce coats the noodles evenly. Finish by sprinkling a moderate amount of sesame seeds over the top for an added nutty aroma and flavor.
