This dish is perfect for a weekend family meal, bringing everyone together around the table. It’s wonderfully quick to make once the noodles are cooked, making it ideal for busy days.   • Romaine lettuce, about 4 handfuls, chopped
  • 1 medium red onion
  • 1/2 bell pepper (use a colorful one if available)
  • 100g ham
  • 10 cashews

Spicy & Tangy Broth

  • 1 package store-bought naengmyeon (cold noodle) broth
  • 3 Tbsp gochujang (Korean chili paste)
  • 2 tsp minced garlic
  • 1 Tbsp mustard (prepared or powdered)
  • 1 tsp vinegar

Cooking Instructions

Step 1

First, prepare your fresh vegetables. Wash the romaine lettuce thoroughly, pat it dry, and chop it into bite-sized pieces (about 4 handfuls). Thinly slice the medium red onion, then soak it in cold water for about 5 minutes to mellow its sharp flavor. Drain the onion well. Arrange these vegetables attractively around the edge of a large, shallow platter.

Now, let’s make the delicious broth. Take one package of store-bought naengmyeon broth. In a bowl, combine 3 tablespoons of gochujang, 2 teaspoons of minced garlic, 1 tablespoon of mustard, and 1 teaspoon of vinegar. Whisk or stir everything together until smooth and well combined.

Cook the buckwheat noodles according to the package instructions for 2-3 servings. Once cooked, rinse the noodles under cold water to stop the cooking process and drain them well. Place the drained noodles in the center of the platter, on top of the arranged vegetables. Garnish the noodles with the thinly sliced 1/2 bell pepper, the roughly chopped 100g ham, and the 10 cashews for a delightful crunch.

Pour the prepared spicy and tangy broth evenly over the noodles and toppings. For the best flavor, ensure the broth is chilled from the refrigerator before serving. Alternatively, you can place the broth in the freezer for a short while until it’s lightly slushy, which adds a wonderfully refreshing touch.
