These chicken breast skewers are infused with the aromatic scents of garlic and butter. As the meat grills, the delightful aroma of butter and garlic fills the air. Main Ingredients
- Chicken tenderloin 2 pieces (approx. 200-250g)
- King oyster mushrooms 1 pack (100g)
- Green onions 2 stalks (approx. 100g)
- Carrot 1/4 medium (approx. 65g, cut into 4x4cm pieces)
- Garlic 2 cloves (approx. 9g, thinly sliced)
- Broccoli sprouts a little (for garnish)
- Tomato 1/2 (optional)
- Skewers 8 pieces
Chicken Marinade
- Salt a pinch
- Minced garlic 0.5 tsp (2.5ml)
- Honey 0.5 tsp
- Cooking wine (Mirin or Sake) 1 Tbsp
- Pepper a little (sprinkled)
Barbecue Sauce
- Ketchup 4 Tbsp
- Worcestershire sauce 4 Tbsp
- Sugar 1 Tbsp
- Pepper a little (sprinkled)
- Dried parsley flakes to taste

- Butter 21g (divided into 8 pieces)
- Salt a pinch (sprinkled while grilling)
- Dried parsley a little (sprinkled after cooking)

Cooking Instructions
Step 1
First, slice the chicken tenderloin into approximately 0.7cm thick pieces. Thinly slice the 2 cloves of garlic. In a bowl, combine the chicken with a pinch of salt, 0.5 tsp minced garlic, 0.5 tsp honey, 1 Tbsp cooking wine, and a sprinkle of pepper. Mix well and let it marinate until ready to skewer.
Step 2
Cut the king oyster mushrooms into bite-sized pieces. Chop the 2 green onions into large segments (about 3-4cm in length is good).
Step 3
Cut the carrot into 4cm x 4cm pieces. Cover the cut carrots with plastic wrap and microwave on 500W for about 40 seconds until slightly tender. This step helps prevent the carrots from breaking when skewering.
Step 4
In a small bowl, whisk together the barbecue sauce ingredients: 4 Tbsp ketchup, 4 Tbsp Worcestershire sauce, 1 Tbsp sugar, and a sprinkle of pepper. Cover with plastic wrap and microwave for 1 minute. Stir in a suitable amount of dried parsley flakes.
Step 5
Now it’s time to assemble the skewers. Thread the marinated chicken tenderloin, king oyster mushrooms, green onions, and carrots (and tomato, if using) onto the skewers, alternating the ingredients for a visually appealing presentation. Don’t hesitate to use up all your prepared ingredients.
Step 6
Prepare 21g of butter and cut it into 8 equal pieces. Have your salad greens ready. Heat a pan over medium-low heat without any oil. Add the thinly sliced garlic and sauté over medium-high heat, then reduce to low heat, cooking for about 2 minutes until fragrant and lightly golden.
Step 7
Reduce the pan heat to low. Melt 4 pieces of the prepared butter. Once melted, place 4 skewers in the pan. Sprinkle a pinch of salt evenly over the skewers. Grill for 1 minute over medium heat, then 2 minutes over medium-low heat. Flip the skewers and cook for another 2 minutes over low heat.
Step 8
For the second batch of skewers, wipe the pan clean with a paper towel. Then, repeat the process from step 6 with the remaining 4 skewers, melting the other 4 pieces of butter and grilling them in the same manner (1 minute medium, 2 minutes medium-low, flip and 2 minutes low).
Step 9
Arrange the salad greens on a serving plate. Place the cooked chicken skewers on top. Serving the pre-sautéed garlic alongside enhances the flavor with its combined buttery and garlicky notes. Drizzle with the tangy barbecue sauce. These skewers are wonderfully tender even when cooled, making them an excellent choice for serving guests.
