Chicken Kal-guksu Spaghetti with Deep Flavor from Doenjang
A Unique Spaghetti Dish Made with Kal-guksu Noodles
This is a special spaghetti where you can enjoy the rich flavor of chicken, enhanced by the use of homemade doenjang (fermented soybean paste). Tender, shredded chicken and chewy kal-guksu noodles come together for an unforgettable dish. Experience a unique twist on spaghetti that’s different from the usual.
Main Ingredients- 1 whole chicken for stewing (approx. 800g-1kg)
- 3 servings Kal-guksu noodles (approx. 300g)
- 1 can (400g) whole peeled tomatoes
- 1/2 onion
- 3 cloves garlic
- A little paprika (using various colors is recommended for visual appeal)
Cooking Instructions
Step 1
First, thoroughly wash the chicken. Place the chicken in a pot, add enough water to cover it completely, and stir in 1 tablespoon of homemade doenjang. Bring to a boil over high heat, then reduce to medium-low heat and simmer until the chicken is tender (about 30-40 minutes).
Step 2
While the chicken is boiling, you can add a samgyetang herbal pack for extra flavor and to remove any gamey smell. This is optional, but it adds a wonderful depth to the broth.
Step 3
Once the chicken is cooked, remove it from the pot and let it cool slightly. While it’s still warm but cool enough to handle, shred the meat into bite-sized pieces. This will make it easier to incorporate into the sauce later.
Step 4
Now, prepare the kal-guksu noodles. Gently shake off any excess flour from the noodles. In a pot of boiling water, cook the kal-guksu noodles, stirring occasionally to prevent them from sticking together. Once the noodles are perfectly chewy, drain them well.
Step 5
Heat 2 tablespoons of olive oil in a pan over medium-low heat. Add the thinly sliced garlic and sauté until fragrant, being careful not to burn it. Once the garlic is lightly golden, add the sliced onion and cook until it becomes translucent and releases a sweet aroma.
Step 6
When the onions are well softened, add the sliced bell peppers and stir-fry for another 1-2 minutes until they are vibrant. Avoid overcooking the bell peppers to maintain their crispness.
Step 7
Add the can of whole peeled tomatoes to the pan with the sautéed vegetables. Use a spoon or spatula to break down the tomatoes as the sauce simmers and thickens. Remember that doenjang is salty, so taste and adjust seasoning at the end.
Step 8
Once the sauce has reduced slightly, add the cooked kal-guksu noodles. Toss everything together vigorously (‘shake, shake!’) until the noodles are evenly coated with the delicious tomato sauce.
Step 9
