Cooking Instructions
Step 1
First, gently separate the cabbage leaves and soak them in water with a bit of vinegar for about 10 minutes to sanitize them. This ensures a more hygienic meal.
Step 2
After sanitizing, drain the cabbage well and slice it into very thin shreds.
Step 3
Thinly julienne the purple onion. Place the julienned onion and cabbage in a bowl of ice-cold water for a few minutes. This step removes the sharpness from the onion and enhances the crisp texture of the vegetables, making them more enjoyable. Preparing the vegetables in advance can significantly shorten your cooking time.
Step 4
Remove the seeds from the red and yellow bell peppers and julienne them thinly. The variety of colors will make your Vietnamese rolls visually appealing.
Step 5
Peel the carrot and julienne it into thin, uniform strips. The natural sweetness of the carrot will add a delightful flavor.
Step 6
Trim the edges of the cucumber and cut it into thin matchsticks, avoiding the seedy core. The crispness of the cucumber adds a refreshing element.
Step 7
Cut a ripe avocado in half, remove the pit, and then gently scoop out the flesh with a spoon.
Step 8
Slice the scooped avocado flesh into thin strips, similar in thickness to the other vegetables. Its creamy texture and rich flavor will beautifully complement the rolls.
Step 9
In a bowl, combine the pre-cooked chicken breast with all the ingredients for the chicken breast seasoning (soy sauce, oyster sauce, sugar, vinegar, sesame oil, and minced garlic). Gently mix everything together until the chicken is evenly coated. Let it marinate briefly.
Step 10
For a large pineapple, it’s easier to peel if you first cut it into 1-2cm thick rounds, and then trim off the rind by making wedge cuts, rather than trying to peel the whole fruit at once.
Step 11
Once prepared, julienne the pineapple into bite-sized strips. Its sweet and tangy taste will cut through any richness.
Step 12
Now, arrange all the prepared vegetables, fruits, and chicken breast attractively on serving plates. The vibrant mix of colors creates a stunning presentation. In a small bowl, combine the Vietnamese spring roll sauce and sweet chili sauce in a 1:1 ratio for the dipping sauce. Have a basin of lukewarm water ready for dipping the rice paper, and with all the ingredients laid out, you are all set to enjoy these cool and delicious Vietnamese rolls!
