Sandwich Ingredients
  • 1 Ciabatta roll
  • Fresh tomato
  • Crisp lettuce
  • 1 slice of cheese
  • 1 piece of chicken breast
  • Pinch of salt
  • Pinch of pepper
  • 1 Tbsp Mayonnaise
  • 1 Tbsp Mustard sauce

Cooking Instructions

Step 1

1. For the star of your ciabatta sandwich, season the chicken breast with salt and pepper and let it marinate for a short while. If your chicken breast is thick, slicing it in half horizontally will help it cook faster – perfect when you’re hungry!

Step 2

Heat a pan over medium heat, add a little oil, and gently wipe it with a paper towel. Then, add a small amount of butter to enhance the flavor. (Be careful, as butter can burn easily.)

Step 3

While the chicken is marinating, prepare the sauce and vegetables. Mix mayonnaise and mustard sauce in a 1:1 ratio to create a delicious spread.

Step 4

Slice the ciabatta roll in half lengthwise. You want to create a nice space for all the delicious fillings.

Step 5

Thinly slice the fresh tomato. These will add a juicy, fresh element to your sandwich.

Step 6

Spread the prepared sauce evenly on the inside of both halves of the ciabatta roll. (I used a squid ink ciabatta for health reasons this time, and the sauce made the color look quite interesting!)

Step 7

Layer the crisp lettuce on the bottom half of the roll. If you don’t have lettuce on hand, any mixed greens from your fridge will work wonderfully.

Step 8

Now, place the beautifully cooked chicken breast, the star of the show, proudly on top of the lettuce.

Step 9

Arrange the sliced tomatoes over the chicken breast.

Step 10

If you’re making this for kids, adding a slice of cheese on top will boost the nutrition and make it even more appealing.

Step 11

Now, place the top half of the ciabatta roll – the ‘lid’ – onto the fillings to complete the sandwich.

Step 12

Wrap the sandwich tightly in plastic wrap to help it hold its shape. This makes it easier to handle and eat, and keeps everything neatly contained.

Step 13

Voila! Your beautifully shaped and colorful Chicken Breast Ciabatta Sandwich is ready. It looks as good as it tastes!

Step 14

2. Onion Soup: Let’s move on to a delightful side dish – Onion Soup. Begin by sautéing the onions in butter for an extended period. You want them to become deeply golden.

Step 15

Sauté the onions for about 40 minutes until they turn a rich, caramel brown. This slow caramelization develops a deep, sweet flavor.

Step 16

Once the onions are beautifully caramelized, add 1 tablespoon of flour (about a tablespoon from a soup spoon) and sauté them together again. Make sure to mix well to avoid lumps.

Step 17

You’ll notice the mixture starting to thicken slightly as the flour and onions combine. This is the base for your soup’s consistency.

Step 18

Pour in water and add chicken stock to simmer. I often make my own chicken stock by boiling down leftover chicken bones, then freezing it for later use. (Using homemade stock adds incredible depth of flavor.)

Step 19

If you don’t have chicken stock or homemade broth, plain water or vegetable broth will also work. Once the soup simmers to your desired consistency, season with salt to taste.

Step 20

Traditionally, French onion soup is served with a baguette slice, but I used leftover sandwich bread, cut into pieces, for mine.

Step 21

Top the bread with a generous amount of mozzarella cheese. You want plenty of cheese to melt beautifully into the soup.

Step 22

Place the soup in the microwave and heat until the mozzarella cheese is melted and golden brown. Enjoy it warm!

Step 23

And there you have it – the humble onion transformed into a rich, creamy, and wonderfully comforting Onion Soup. It’s a perfect accompaniment to your sandwich!
