Chicken and Egg Fried Rice

I said I was going on a diet, but here I am making delicious fried rice! Let’s make the most of leftover chicken breast with this super simple, one-pan meal. Enjoy a satisfying and tasty dish! It’s quick and easy, perfect for busy days.
Ingredients- 2 bowls of rice (warm)
- 100g chicken breast (cut into bite-sized pieces)
- 1 stalk of green onion (finely chopped)
- 1/2 onion (sliced)
- 1/2 Tbsp minced garlic
- 2 eggs
- Pinch of black pepper
- Pinch of salt (or 1 Tbsp oyster sauce)
- Cooking oil as needed
Cooking Instructions
Step 1
Finely chop the chicken breast into small pieces, about 1cm. If you don’t have chicken breast, you can still make a delicious fried rice with just eggs. Feel free to add any leftover vegetables you have in the fridge.
Step 2
In a wide pan, add all the chopped green onions. Sauté over low heat until fragrant to create scallion oil. This step significantly enhances the flavor of the fried rice.
Step 3
Add the sliced onion to the pan and stir-fry with the green onions until translucent. The sweetness of the onion will add depth to the fried rice.
Step 4
Push the sautéed vegetables to one side of the pan. Add a little more cooking oil to the empty space and sauté the minced garlic until fragrant. Then, mix it lightly with the vegetables to add aroma.
Step 5
Now, add the chicken breast and stir-fry until the exterior turns white and it’s cooked through. It’s important to break up the chicken breast as it cooks to ensure even cooking.
Step 6
Combine all the ingredients together and then push them to one side of the pan again. Crack the 2 eggs into the empty space and scramble them with chopsticks until softly set. Once the eggs are cooked, mix them with the other ingredients.
Step 7
Add the 2 bowls of warm rice to the pan. Season with a pinch of black pepper and salt. Gently stir and break up the rice with a spatula until the grains are separate and fluffy. (Alternatively, you can use 1 tablespoon of oyster sauce instead of salt for a richer flavor.) Stir-fry for another 1-2 minutes until all the ingredients are well combined. Your delicious Chicken and Egg Fried Rice is ready!
