Main Ingredients

  • 1 whole squid (use fresh ones)
  • 1/3 onion (thinly sliced)
  • 1 green onion (cut into long strips, to remove spiciness)
  • 1/2 Tbsp butter (for added flavor)
  • A little chopped green onion (for garnish)

Spicy and Sweet Sauce

  • 1 Tbsp soy sauce (the base for umami)
  • 1 Tbsp oyster sauce (for deep flavor)
  • 1 Tbsp sugar (adjust sweetness)
  • 1 Tbsp cooking wine (mirin) (removes gamey smell and enhances flavor)
  • 1 tsp minced garlic (pungent aroma)
  • 1 tsp ginger juice (enhances fragrance and flavor)
  • A pinch of black pepper (finishing spice)

Cooking Instructions

Step 1

Rinse the fresh squid thoroughly under running water. Carefully remove the internal organs from the body. Peel off the skin. Make diagonal cuts about 1cm apart on both sides of the squid’s body; this helps the sauce penetrate well and makes the squid look beautiful when cooked. Prepare the tentacles as well.

Let’s make a special sauce for delicious grilled squid! In a small bowl, combine the soy sauce, oyster sauce, sugar, cooking wine, minced garlic, ginger juice, and black pepper. Stir well until the sugar is dissolved for a simple, perfect sauce.

Wash the onion, pat it dry, and then thinly slice it. The sweetness of the onion will complement the squid’s flavor beautifully.

Wash the green onion. Slice the green parts into long strips and chop the white parts. Soaking the sliced green onion in water for a short while will remove its spiciness, making it more tender.

Melt 1/2 Tbsp of butter in a heated pan. Once the buttery aroma arises, add the prepared squid body and tentacles. Stir-fry over medium-low heat, turning occasionally, just until the squid turns opaque white. Be careful not to overcook, as it can become tough.

As the squid begins to cook, brush both sides evenly with the prepared sauce. Then, reduce the heat slightly and let it simmer gently until the sauce is fully absorbed and the squid is cooked through. You can add more sauce periodically while turning.

Use the remaining sauce in the pan after cooking the squid! Add the thinly sliced onion and stir-fry together. Cook until the onion becomes translucent and the sauce thickens slightly to a glaze. This creates a delicious sauce to enjoy with the squid. Transfer the grilled squid to a plate, garnish with chopped green onion, and your whole grilled squid is ready!
