Main Ingredients- 150g Dried Squids (Small Type/Jjae-gal-chi/Small Squid Variety)
Seasoning Ingredients- 2 Tbsp Cooking Oil
- 1 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce
- 1 Tbsp Corn Syrup (or Cooking Syrup)
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Sesame Oil
- 1 tsp Toasted Sesame Seeds
- 2 Tbsp Cooking Oil
- 1 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce
- 1 Tbsp Corn Syrup (or Cooking Syrup)
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Sesame Oil
- 1 tsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, rinse the dried squids under running water several times to clean them thoroughly. They tend to foam a lot when rinsed. Place them in a sieve and repeat rinsing about 4-5 times until the foam subsides. Then, drain them completely. This process helps reduce any bitterness or fishy smell, enhancing the natural flavor of the squids.
Step 2
Heat 2 tablespoons of cooking oil in a wok or pan over medium-low heat. Add 1 tablespoon of minced garlic and stir-fry slowly until fragrant. Be careful not to burn the garlic; cook it until a gentle garlic aroma arises. This step adds depth to the flavor of the stir-fried squids.
Step 3
Add the prepared dried squids to the aromatic garlic oil and stir-fry them together. Cook for about 2-3 minutes, allowing the squids to absorb the oil and garlic flavor. The squids will start to turn slightly translucent as they cook.
Step 4
Now, add all the seasoning ingredients: 2 tablespoons of soy sauce, 1 tablespoon of corn syrup (or cooking syrup), and 1 tablespoon of gochugaru (Korean chili flakes). Stir and toss continuously to coat the squids evenly with the sauce. The gochugaru will add a spicy and savory kick.
Step 5
Stir-fry over high heat for about 2-3 minutes to allow the sauce to meld with the squids. It’s important to keep stirring to prevent sticking. Avoid overcooking to maintain the chewy texture of the squids. A quick stir-fry just before turning off the heat ensures the best texture.
Step 6
Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for a nutty aroma, and sprinkle 1 teaspoon of toasted sesame seeds to finish. Your delicious stir-fried dried squids are now ready! Serve them over warm rice for a delightful meal.
