Sweet potatoes are delicious simply steamed, but sometimes it’s fun to make them into a unique snack! Today, we’re making ‘Chewy Sweet Potato Pancakes’ using glutinous rice flour, which gives them a wonderfully chewy texture. ^^

  • 2 medium boiled sweet potatoes
  • 2/3 cup glutinous rice flour (using a paper cup for measurement)
  • 1 Tbsp sugar
  • 1/3 Tbsp salt

First, take 2 medium-sized sweet potatoes and mash them thoroughly in a bowl while they are still warm. Ensure there are no lumps for a smooth batter.

Add 1 tablespoon of sugar, 1/3 tablespoon of salt, and 2/3 cup of glutinous rice flour (measured with a paper cup) to the mashed sweet potatoes. Adding glutinous rice flour is key to achieving that desirable chewy texture.

Begin mixing the ingredients to form a dough. Since sweet potatoes contain moisture, add water very gradually, mixing until you achieve a thick, dough-like consistency. Avoid adding too much water at once, as this can make the dough too sticky and difficult to shape.

Take portions of the dough, about a tablespoon in size, and roll them into balls between your palms. Ideally, the dough should be firm enough to handle without sticking excessively to your hands. If it’s too wet, you can add a tiny bit more glutinous rice flour, or lightly oil your hands.

Heat a frying pan with a generous amount of oil over medium heat. Place the dough balls onto the pan and gently flatten them with a spatula, similar to making hotteok (Korean sweet pancakes). Lightly oiling the spatula will prevent the dough from sticking as you press it down.

Once flattened, place an almond (or other toppings like pumpkin seeds or black sesame seeds) onto each pancake. Cook over low heat, flipping occasionally, until both sides are golden brown and slightly crispy. Be careful not to burn them!
