For a simple yet delightful lunch, I’ve opted for a ‘home cafe’ experience with ‘Injeolmi Waffles’ and ‘Strawberry Latte’. Strawberries are quite affordable these days! My neighbor, knowing my love for rice cakes, kindly brought over some injeolmi (Korean pounded rice cake). So, I decided to make Injeolmi Waffles. To make it feel like a special brunch or dessert, I set up a charming spot surrounded by flowers. Don’t flowers bring a sense of peace and relaxation? Ingredients
  • 1 large piece of Injeolmi (Korean pounded rice cake)
  • Fresh strawberries
  • Milk
  • Vanilla ice cream

Cooking Instructions

Step 1

The Injeolmi I’m using today is quite large, so one piece is enough to make a substantial waffle. Ensure your Injeolmi is appropriately sized for your waffle maker.

Step 2

If your Injeolmi is too hard, microwave it for about 30 seconds to soften it. This makes it easier to press into the waffle maker and ensures a better texture. Place the softened Injeolmi onto your preheated waffle maker.

Step 3

While the waffle is cooking, let’s prepare the strawberries. Wash them gently, then soak them in a bowl of water with a tablespoon of vinegar for a few minutes to clean thoroughly. Rinse them under cool running water, remove the stems, and pat them dry with a paper towel. Removing the stems after washing helps to preserve the fruit’s integrity.

Step 4

Because the Injeolmi piece was so large, it slightly spilled over the edges of the waffle maker. This creates a wonderfully full and satisfying waffle.

Step 5

Carefully remove the golden-brown Injeolmi waffle from the maker. Cut it in half and arrange the pieces attractively on a plate.

Add a scoop of vanilla ice cream on top of the waffle. The contrast between the warm, chewy waffle and the cold, creamy ice cream is delightful.

To make the strawberry latte, add about 1/3 cup of strawberry syrup (or mashed strawberries) to a glass. Then, gently pour in milk until the glass is nearly full. This creates a beautiful layered effect and a refreshing drink.
