Coating Cheongyang peppers with flour and steaming them creates an incredibly chewy texture that’s delightful to bite into. This dish is a side of Cheongyang peppers seasoned with a perfectly balanced spicy and sweet sauce, bringing out their best flavor. It’s a real appetite stimulant!

  • 6 Tbsp all-purpose flour
  • 15 Tbsp water

First, prepare the Cheongyang peppers. Trim off the stems from the peppers and wash them thoroughly under running water. Pat them dry. This step ensures they don’t stick together when steamed and cook evenly.

In a bowl, combine the 6 tablespoons of all-purpose flour with 15 tablespoons of water. Whisk until smooth and lump-free, creating a thick batter. The batter should be thick enough to lightly coat the peppers, not too watery or too dense.

Add the prepared Cheongyang peppers to the flour batter and gently toss to coat each pepper evenly. Be careful not to mash the peppers. This flour coating is what will give them their signature chewy texture.

Line a steamer basket with a clean kitchen towel. Arrange the flour-coated peppers in a single layer on the towel. Cover the steamer with a lid and steam over high heat for about 10 to 15 minutes. It’s important to steam them until the flour coating turns translucent, indicating they are cooked through.

The peppers are fully cooked when the flour coating becomes transparent. Carefully remove the steamer basket and let the peppers cool slightly. They might stick together if separated while too hot, so allowing them to cool a bit before gently separating them is best.

Now, let’s make the delicious seasoning. In a small bowl, combine 1 tablespoon of red pepper flakes, 2 tablespoons of soy sauce, 1.5 teaspoons of salt, 1 tablespoon of corn syrup, and optionally, 1 teaspoon of minced garlic. Mix well until thoroughly combined. You can substitute corn syrup with honey or rice syrup if preferred.

Add the slightly cooled Cheongyang peppers to the seasoning mixture. Gently toss them to coat evenly with the sauce, being careful not to break the peppers. Mix delicately to ensure the sauce adheres well without damaging the peppers.
