As the weather turned a bit chilly again after a warm spell, I wanted to make a comforting bowl of food. That’s how I ended up making Kalguksu, where you can enjoy the wonderfully chewy noodles. This recipe is perfect for a satisfying meal.

Main Ingredients

  • 160g Kalguksu noodles
  • 1/2 squid
  • 1/3 zucchini
  • 1/2 green onion
  • 1L anchovy broth

Seasoning & Aromatics

  • 2 Tbsp Korean soy sauce (Gukganjang)
  • 1 Tbsp fish sauce (Aekjeot)
  • 1 tsp minced garlic

Cooking Instructions

Step 1

First, prepare the anchovy broth, which is the foundation for a delicious Kalguksu. Boil anchovies and kelp to create a deep and refreshing flavor.

Slice the cleaned squid into bite-sized pieces. Julienne the zucchini and green onion. It’s best to slice vegetables when they are fresh to prevent them from becoming mushy.

Gently shake off the excess starch powder from the Kalguksu noodles. Too much starch can make the broth cloudy.

If the noodles still seem very starchy, you can lightly rinse them under cold water just before adding them to the boiling broth. Be careful not to rinse them for too long, as this can make the noodles too soft.

Once the anchovy broth is boiling vigorously, add the seasoning ingredients such as Korean soy sauce, fish sauce, and minced garlic. Taste and adjust the seasoning, as the saltiness of soy sauce and fish sauce can vary between households. Then, add the Kalguksu noodles.

After adding the noodles, bring the soup to a boil over high heat. Once it starts boiling again, reduce the heat to medium and cook until the noodles are done. Stir occasionally to prevent the noodles from sticking.

When the noodles are about two-thirds cooked, add the julienned zucchini and green onion. Let it simmer for a bit longer. The vegetables will cook slightly and add a refreshing taste to the soup.

Fresh squid can become tough if overcooked, so add it to the pot about 1 minute before turning off the heat. Once the squid is tender, turn off the heat and serve the hot Kalguksu in bowls. For an extra burst of flavor, serve with your favorite dipping sauce or kimchi on the side.
