Main Ingredients- 1 squid (cleaned)
- 1/4 red bell pepper
- 1/4 yellow bell pepper
- 1/4 green bell pepper
- 1/4 carrot
- 1/4 green onion
- 1/3 cup water (approx. 60ml)
- 2 eggs
- Cooking oil (for frying)
- 3 Tbsp pancake mix (approx. 45g)
Cooking Instructions
Step 1
Rinse the cleaned squid, pat it dry, and finely chop it. Aim for a texture that still has some chewiness rather than making it too mushy.
Step 2
Finely chop the colorful bell peppers, carrot, and green onion into pieces similar in size to the chopped squid. While ‘Sumi’s Side Dishes’ might use chili peppers, using a variety of bell peppers makes it visually appealing and suitable for children.
Step 3
In a large bowl, add 3 tablespoons of pancake mix. This will form the base for binding the squid and vegetables.
Step 4
Add the chopped squid and the colorful chopped vegetables to the bowl with the pancake mix and combine them.
Step 5
To achieve the right batter consistency, carefully pour in 1/3 cup of water (about 60ml). Don’t add all the water at once; gradually add more as you mix, aiming for a thick batter.
Step 6
It’s crucial to ensure the batter is thick enough so that the ingredients stick together well. This prevents the pancake from falling apart during cooking.
Step 7
In a separate small bowl, whisk 2 eggs. The egg mixture adds a savory flavor and a crispiness to the pancake. (You can also use just one egg; adjust based on your preference.)
Step 8
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Spoon portions of the batter onto the pan. Gently ladle some of the whisked egg over the batter. Avoid spreading the batter too thinly on the pan.
Step 9
Once the pancake starts to turn golden brown, carefully flip it with a spatula to cook the other side evenly. Frying until golden brown on both sides will result in a chewy and delicious squid and vegetable pancake. Serve with a dipping sauce made from soy sauce, vinegar, and chili powder, if desired.
