Main Ingredients

  • 320g firm tofu (approx. 1.5 blocks)
  • 1 whole cleaned squid (approx. 130g)
  • 1/2 large onion
  • A small bunch of green onions or 1/2 stalk of leek
  • 1 red chili pepper (e.g., Cheongyang chili)

Braising Sauce Ingredients

  • 2 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp soy sauce
  • 2 Tbsp fish sauce (or anchovy sauce)
  • 1 Tbsp minced garlic
  • 2 Tbsp allulose (or corn syrup/oligo-dang)
  • 1 Tbsp perilla oil (or sesame oil)
  • Pinch of black pepper
  • 2/3 Cup (approx. 130ml) water brewed with dried kelp (dashima)

Cooking Instructions

Step 1

Slice the tofu into thick pieces, about 1cm (0.4 inch) in thickness. Rinse the cleaned squid thoroughly under running water and slice it into rings, about 1cm wide. If your squid is larger, you can cut it in half lengthwise before slicing into rings. Thinly slice the onion into strips. Chop the green onions (or leek) and red chili pepper diagonally into large pieces.

In a pot or a wide pan, spread about two-thirds of the sliced onions on the bottom. Arrange the sliced squid on top of the onions.

Place the thick tofu slices neatly over the squid. Evenly distribute the remaining sliced onions, green onions (or leek), and red chili peppers on top of the tofu.

In a separate bowl, combine the gochugaru, minced garlic, soy sauce, fish sauce, and allulose (or corn syrup). Pour in the 2/3 cup of kelp-infused water and stir well with a spoon until all ingredients are smoothly blended into a sauce.

Pour the prepared braising sauce evenly over the ingredients in the pot (or pan). Ensure the sauce covers everything well.

Place the pot over medium heat and bring to a boil. Once it starts bubbling vigorously, reduce the heat to low and let it simmer until the sauce thickens slightly. In the final step, stir in 1 tablespoon of perilla oil (or sesame oil) and a pinch of black pepper to finish the dish.

This unique combination of chewy squid and tender tofu creates a braise that is both spicy and full of umami. The squid I used was small, which made it perfect for this dish.
