Main Ingredients

  • Frozen squid rings, as needed (thawed)
  • Pasta, 1 serving (approx. 100g)
  • 1/2 Onion
  • 2-3 cloves Garlic

Seasoning & Others

  • 3 Tbsp jarred tomato sauce
  • Pinch of salt (for pasta water and seasoning)
  • Olive oil, a drizzle (optional)
  • 1 bag Shredded pizza cheese (adjust to taste)

Cooking Instructions

First, place the frozen squid rings in water to thaw them until tender. Once thawed, drain any excess water.

While the squid is thawing, dice the onion into bite-sized cubes (about 1cm). Mince or thinly slice the garlic. (Using fresh garlic will provide a more robust aroma.)

In a large pot, bring plenty of water to a boil. Once boiling, add a pinch of salt and a drizzle of olive oil (optional). Add the pasta (about 100g for one serving) and cook for 1-2 minutes less than the time indicated on the package for al dente. Reserve about 2 ladlefuls of the pasta water before draining.

Heat a pan over medium heat with a little olive oil (optional). Add the diced onion and minced garlic, then sauté over low heat to release their aromas. Cook until the onion becomes translucent and the garlic is fragrant. (If using pre-minced garlic, be careful not to burn it.)

Once the onion and garlic are softened, add the thawed squid rings and the drained pasta to the pan. Pour in about 2 ladlefuls of the reserved pasta water. Increase the heat to high and stir-fry, allowing the sauce to reduce and coat the pasta and squid. This step helps create a rich sauce.

As the pasta water reduces, add the 3 tablespoons of jarred tomato sauce. Stir well to combine everything, ensuring the sauce coats the pasta and squid evenly. Taste and add a pinch of salt if needed.

Finally, add the shredded pizza cheese generously. Reduce the heat to low and gently stir until the cheese is melted and gooey. (For extra flavor, you can add cheeses like Pecorino Romano if you have them.)
