Main Ingredients

  • 1 fresh squid
  • 1/4 Korean radish (mu)
  • 2 cups of rice
  • 1.5 Tbsp lemon juice
  • Water, as needed

Seasoning Sauce

  • 3 Tbsp soy sauce
  • 0.5 Tbsp sugar
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 tsp minced garlic
  • 1/2 Cheongyang pepper (spicy pepper)
  • 1 green onion (scallion)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, to retain a crisp texture, wash the radish thoroughly under running water and then slice it thinly into bite-sized pieces (na-bak style). Slicing them into similar sizes will help them cook evenly when layered on the rice.

Prepare the fresh squid by removing the innards and backbone, then clean it well. Finely mince the squid as if dicing it. If the pieces are too large, they might not blend well with the rice, so aiming for rice-grain size is ideal for texture.

Rinse the rice in the rice cooker. After rinsing, evenly spread the sliced radish over the rice. The radish will subtly infuse the rice with its sweetness and aroma as it cooks.

Next, evenly sprinkle the minced squid over the rice and radish. The chewy texture of the squid combined with the rice will be incredibly delicious.

To eliminate any fishy odor from the squid and enhance its flavor, drizzle the lemon juice evenly over the squid and radish. Lemon juice will elevate the overall taste of the ingredients.

Add water to the rice cooker to reach the desired level, just as you would for regular rice. The amount of water might vary slightly depending on the type and condition of the rice, so adjust it as you normally would.

Once all the ingredients are in the rice cooker, press the ‘cook’ button to steam your delicious rice. Use the standard white rice cooking mode.

While the rice is cooking, finely chop the Cheongyang pepper and green onion for the seasoning sauce. If you prefer less heat, you can remove the seeds from the pepper before chopping.

Now it’s time to make the flavorful seasoning sauce. In a bowl, add the soy sauce. Then, add the chopped green onion and chopped Cheongyang pepper.

Add the remaining seasoning ingredients: sugar, red pepper flakes, minced garlic, and sesame oil. Mix everything together to create the sauce. Feel free to adjust the quantities according to your personal taste.
