Introducing a fantastic side dish featuring squid, a favorite in our household! This stir-fry combines tender squid with fragrant garlic scapes, creating a dish that whets the appetite. Main Ingredients
- 1 squid
- 4 garlic scapes
- 1/4 onion

Cooking Instructions
Step 1
Prepare the garlic scapes. Choose fresh garlic scapes for the best harmony with the squid.
Step 2
Trim the ends of the garlic scapes. Wash them thoroughly under running water, paying attention to the areas between the stems and leaves to remove any dirt or debris. If there’s a tough outer layer, peel it thinly.
Step 3
Cut the washed garlic scapes into bite-sized pieces, about 4-5 cm long. Cutting them to a uniform size will ensure they cook evenly.
Step 4
Peel and wash the onion, then slice it into thin strips about 0.5 cm thick. The sliced onion will add sweetness and depth of flavor.

It’s important to clean the squid properly. Remove the skin and thoroughly clean out the ink sacs and internal organs located between the tentacles and the body. Also, remove the transparent quill (cuttlebone if applicable).

Cut the cleaned squid into bite-sized pieces, about 2 cm wide. If you cut them too thinly, they will shrink when cooked, so aim for a moderate thickness.
Step 7
Heat a pan over medium-high heat and add a generous amount of cooking oil. Add the minced garlic and sliced onion, and stir-fry quickly until fragrant. Sauté until the onion becomes slightly translucent.
Step 8
Once the aroma of the onion and garlic is released, add the garlic scapes and stir-fry until they are slightly tender. Then, add the cut squid, red pepper flakes, soy sauce, plum extract, and cooking wine. Stir-fry quickly over high heat until all the ingredients are well combined and coated with the sauce. Drizzle with sesame oil just before turning off the heat, or after turning it off, for an extra nutty aroma.
Step 9
Transfer the delicious stir-fried squid and garlic scapes to a nice serving dish. Finally, sprinkle with sesame seeds for added nutty flavor and texture. Your appetizing and beautiful one-dish meal is complete!
