Main Ingredients

  • 2 blocks (160g x 2) firm tofu, frozen and thawed
  • 3 shiitake mushrooms, fresh or dried
  • 1/2 purple onion
  • 2 Korean green chili peppers (cheongyang)
  • 1 red chili pepper
  • 1/2 green onion

Sauce Ingredients

  • 2 Tbsp soy sauce
  • 2 cups kelp or anchovy broth
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp minced garlic
  • 1 Tbsp corn syrup or oligosaccharide
  • Pinch of ginger powder (optional)
  • 1 Tbsp sesame oil
  • Pinch of black pepper

Cooking Instructions

Step 1

Thaw the frozen tofu by soaking it in water or placing it in the refrigerator. If using dried shiitake mushrooms, soak them in warm water for about 10 minutes until rehydrated.

Slice the thawed tofu into approximately 1.5cm thick pieces. Thinly slice the purple onion. Slice the green and red chili peppers diagonally. Remove the stems from the shiitake mushrooms and slice them about 0.5cm thick.

Line the bottom of a wide pan with the sliced onions. Arrange the tofu pieces evenly on top of the onions. This prevents the onions from burning and helps the tofu absorb the delicious sauce.

Arrange the sliced shiitake mushrooms attractively over the tofu. Now, let’s make the sauce. In a bowl, combine soy sauce, broth, red pepper flakes, minced garlic, corn syrup, ginger powder, and black pepper. Mix well. You can also add the reserved chili peppers and onions to the sauce.
