Chewy Shiitake Mushroom and Radish Rice (Pyogo Beoseot Mu Bap)
Making Delicious Shiitake Mushroom and Radish Rice with Flavorful Shiitake Mushrooms
Today, I’m using the abundant shiitake mushrooms my parents brought from the countryside to make a delightful Pyogo Beoseot Mu Bap (Shiitake Mushroom and Radish Rice) with shredded radish and mushrooms! It’s common to add ingredients like pine needle rice (gondre bap), radish rice (mu bap), soybean sprout rice (kongnamul bap), or mushroom rice (beoseot bap) when cooking rice. However, I decided to make rice with the visible radish and shiitake mushrooms right in front of me. This recipe is perfect for those looking to add a healthy and flavorful twist to their everyday meals!
Ingredients- 1.5 Rice Cups of Rice (approx. 270g)
- 300ml Water (or 1.2 times the amount of rice)
- 7 Shiitake Mushrooms (fresh, or rehydrated dried shiitake mushrooms)
- 1 thumb-sized piece of Radish (approx. 50-70g)
Cooking Instructions
Step 1
We’ll enhance the flavor using fresh shiitake mushrooms. If you’re using dried shiitake mushrooms, remember to soak them thoroughly in warm water beforehand.
Step 2
Wash the shiitake mushrooms clean, remove the tough stems, and thinly slice them into strips. A quick rinse under water can help remove any dirt. Wash the radish, peel it, and then thinly julienne it to a similar length as the shiitake mushrooms. Using about a thumb-sized piece of radish is a good amount to balance the flavors in the rice.
Step 3
Rinse the rice thoroughly and let it drain in a sieve. Add the rinsed rice to your rice cooker pot. Evenly spread the julienned radish and prepared shiitake mushrooms on top of the rice. Pour in 300ml of water, which is about 1.2 times the amount of rice. Ensure the rice and ingredients are slightly submerged in the water.
Step 4
Once all ingredients are prepared, press the ‘Cook’ or ‘White Rice’ button on your rice cooker. You can cook it just as you normally would. Now, just wait for the rice to be perfectly cooked!
Step 5
Voila! Your delicious Shiitake Mushroom and Radish Rice is ready. Carefully take out the steaming pot of rice from the cooker. You’ll see not only fluffy rice but also chewy shiitake mushrooms and crisp radish pieces, making it look incredibly appetizing.
Step 6
Gently fluff the cooked rice with a spatula to prevent the grains from clumping together. This will make it even more enjoyable to eat. Serve this warm rice with a simple soy sauce dressing, kimchi, or your favorite side dishes. Experience a delightful mealtime with the rich aroma of shiitake mushrooms and the refreshing taste of radish filling your palate!
