Main Ingredients- 200g shiitake mushrooms
- 90g Korean green peppers (kwari peppers)
- 1 red chili pepper
- 1/4 onion
Seasoning- 2 Tbsp soy sauce (jin-ganjang)
- 1/2 Tbsp anchovy sauce (or fish sauce)
- 2 Tbsp cooking wine (mirin)
- 2 Tbsp corn syrup (or rice syrup)
- 1 Tbsp minced garlic
- Pinch of black pepper (a few cracks)
- 2 Tbsp soy sauce (jin-ganjang)
- 1/2 Tbsp anchovy sauce (or fish sauce)
- 2 Tbsp cooking wine (mirin)
- 2 Tbsp corn syrup (or rice syrup)
- 1 Tbsp minced garlic
- Pinch of black pepper (a few cracks)
Cooking Instructions
Step 1
First, trim the tough stems from the shiitake mushrooms and slice them about 0.5cm thick. Wash the Korean green peppers under running water and snip off their tops. Finely chop the red chili pepper after removing the seeds. Peel and thinly slice the onion. Cutting all ingredients into similar sizes ensures even cooking and an appealing presentation.
Step 2
Now, let’s marinate the sliced shiitake mushrooms. Add 1 Tbsp soy sauce and 1 Tbsp sesame oil, then gently mix to coat the mushrooms evenly. This step enhances the mushroom’s flavor and helps them absorb the sauce better. Let them sit for a moment.
Step 3
The key to a delicious stir-fry is the sauce! In a bowl, combine 2 Tbsp soy sauce, 1/2 Tbsp anchovy sauce, 2 Tbsp cooking wine, 2 Tbsp corn syrup, 1 Tbsp minced garlic, and a pinch of black pepper. Whisk everything together. Preparing the sauce in advance saves time during cooking and ensures the ingredients are coated evenly. (If you don’t have anchovy sauce, you can substitute with soy sauce or fish sauce).
Step 4
Heat 1-2 Tbsp of cooking oil in a pan over high heat. Add the prepared Korean green peppers and stir-fry them quickly until they are slightly lightly browned. Stir-frying the peppers first helps retain their fragrant aroma and crisp texture, making them even more delicious.
Step 5
Once the Korean green peppers are slightly cooked, pour the pre-mixed sauce into the pan in 2-3 additions, letting it bubble and coat the ingredients. Allowing the sauce to simmer and cling to the ingredients will significantly boost the umami flavor. Adjust the heat to prevent burning.
Step 6
Now, add the marinated shiitake mushrooms and stir-fry them with the peppers. Once the mushrooms are well combined with the sauce, add the sliced onion and cook until it becomes translucent. Finally, sprinkle with chopped red chili pepper and sesame seeds for a glossy finish. Your delicious Shiitake Mushroom and Korean Green Pepper Stir-fry is ready! Serve it over warm rice and enjoy.
