Hello everyone! Today marks our second attempt at making delicious, chewy sesame mochi bread without any pre-made mixes. While the previous recipe used tapioca starch, this time we’re using ‘soy soft’ to create an even softer and more flavorful mochi bread! Shall we get started on making this irresistibly chewy ‘Dinosaur Egg Bread’?
Sesame Mochi Bread Ingredients- Soy soft 600g
- Bread flour 195g
- Salt 7g
- Eggs 3 (room temperature)
- Soy sauce 12g
- Black sesame seeds 24g
- Water 180g (lukewarm)
- Butter 147g (softened at room temperature)
Cooking Instructions
Step 1
Let’s start making the sesame mochi bread! It’s quite simple. First, combine all the ingredients in a bowl: soy soft, bread flour, salt, eggs, soy sauce, black sesame seeds, and lukewarm water. Mix everything together until it forms a cohesive mass. Ensuring all ingredients are evenly incorporated is key at this stage.
Step 2
Given the quantity of ingredients, using a stand mixer is recommended. However, if you halve the recipe, you can easily make this by hand! If using a mixer, knead for about 5-7 minutes until the dough becomes smooth and cohesive. If kneading by hand, continue to work the dough until it forms a single, unified ball.
Step 3
Once the dough is ready, cover the bowl with plastic wrap and let it rest for about 15 minutes at room temperature for the first proof. An important note: this dough doesn’t rise like typical bread dough! After the resting period, it will only gain a slight volume; don’t worry if it doesn’t look significantly puffed up.
Step 4
After the rest, divide the dough into portions of approximately 60g each. Shape each portion into a smooth, round ball. It’s a good idea to lightly dust with flour or cover with plastic wrap to prevent the dough surface from drying out. After shaping, let the dough rest for about 5 minutes to further soften it.
Step 5
To achieve a beautiful cracked surface on your sesame mochi bread, lightly mist the surface of the shaped dough balls with a spray bottle filled with water. This step helps prevent the dough from drying out during baking and aids in creating steam inside the oven, contributing to a crispier crust.
Step 6
Now it’s time to enjoy your freshly baked bread! Place the dough balls into a preheated oven at 190°C (375°F) and bake for about 20 minutes, or until golden brown. Baking times may vary depending on your oven. Once baked, let the bread cool completely on a wire rack to ensure the best texture – a crispy exterior and a wonderfully chewy interior!
