Recipe for Seaweed and Beef Rice: A Different Kind of One-Bowl Dish
Steamed with rice, the seaweed in this dish offers a wonderfully soft texture. Combined with sweet radish and savory beef, it’s a delightful one-bowl meal that adds extra enjoyment to your dining experience. The natural flavors are enhanced through steaming, creating a healthy and satisfying dish perfect for any occasion.
Main Ingredients- Fresh sea tangle (Hizikia fusiforme) 130g
- Sweet radish 110g
- Minced beef 80g (lean cut)
- Kelp (for broth) 1 sheet
- Soaked rice 3 cups
- Cooking wine (Cheongju) 1 Tbsp
- Water 400ml
- Crushed sesame seeds (for garnish) a little
- Sesame oil (for garnish) a little
Beef Marinade- Soy sauce 1 tsp
- Sesame oil 1/2 tsp
- Black pepper 2 pinches
- Sugar 2 pinches
Flavorful Seasoning Sauce- Scallions (Dallae) 50g (finely chopped)
- Soy sauce 2 Tbsp
- Plum extract (Maesil-cheong) 1 Tbsp
- Red pepper flakes (Gochugaru) 1 Tbsp
- Minced garlic 1 tsp
- Green chili pepper 1/2 (seeds removed, finely chopped)
- Red chili pepper 1/2 (for color, finely chopped)
- Crushed sesame seeds 1/3 Tbsp
- Sesame oil 1 tsp
- Soy sauce 1 tsp
- Sesame oil 1/2 tsp
- Black pepper 2 pinches
- Sugar 2 pinches
Flavorful Seasoning Sauce- Scallions (Dallae) 50g (finely chopped)
- Soy sauce 2 Tbsp
- Plum extract (Maesil-cheong) 1 Tbsp
- Red pepper flakes (Gochugaru) 1 Tbsp
- Minced garlic 1 tsp
- Green chili pepper 1/2 (seeds removed, finely chopped)
- Red chili pepper 1/2 (for color, finely chopped)
- Crushed sesame seeds 1/3 Tbsp
- Sesame oil 1 tsp
Cooking Instructions
Step 1
To remove any unpleasant sea odor, soak the seaweed in 400ml of water mixed with 1 Tbsp of vinegar for 30 minutes. This helps to neutralize the fishy smell. Afterwards, rinse the seaweed thoroughly under running water several times, then drain it well in a colander until most of the water has dripped off.
Step 2
Julienne the radish into short, thick strips, about 2cm in length. Cut the prepared seaweed into 2cm pieces as well. In a bowl, combine the minced beef with all the ‘Beef Marinade’ ingredients. Gently mix and massage the marinade into the beef, ensuring it’s evenly coated. Set aside.
Step 3
In your rice cooker pot, spread the marinated beef thinly on the very bottom. This layer acts as a base and allows the savory juices to infuse the rice as it cooks, adding depth of flavor.
Step 4
Arrange the rinsed rice evenly over the beef. Then, layer the cut seaweed and julienned radish on top of the rice. Place the sheet of kelp in the center. Pour in the 400ml of water and 1 Tbsp of cooking wine. Close the lid and select the ‘cook’ or ‘rice’ setting on your rice cooker. Let the magic happen!

Once the rice is cooked, gently fluff the seaweed and beef rice with a spatula. Transfer the rice to serving bowls. Drizzle with a little sesame oil and sprinkle with crushed sesame seeds. Serve with the prepared seasoning sauce on the side. Mix the sauce into the rice to your liking for a delightful meal that combines the fresh taste of the sea with the rich flavor of beef.
