  • 2 handfuls dried seaweed strips (approx. 100g)
  • 1 medium onion
  • 1 medium cucumber

Seasoning Ingredients

  • 4 Tbsp vinegar
  • 4 Tbsp anchovy sauce
  • 3 Tbsp plum syrup (or extract)
  • 1 Tbsp sesame seeds
  • 1/2 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean red pepper flakes)

Cooking Instructions

Step 1

First, soak the dried seaweed strips in cold water for about 30 minutes. This will soften the seaweed and bring out its pleasant chewy texture.

Peel the onion and thinly slice it into strips. Wash the cucumber thoroughly under running water and then slice it into thin strips as well. Removing the seedy core of the cucumber can help reduce excess moisture.

Add 1/2 tablespoon of minced garlic to the bowl containing the sliced onion and cucumber. Minced garlic will enhance the aroma and flavor of the dish, elevating its overall taste.

Next, add 2 tablespoons of gochugaru (Korean red pepper flakes) for a touch of spiciness. You can adjust the amount of gochugaru according to your preference.

Pour in 4 tablespoons of anchovy sauce to add a savory depth. While you can substitute with regular soy sauce or soup soy sauce, anchovy sauce provides a richer flavor profile.

Add 3 tablespoons of plum syrup (or extract) for a delightful sweet and tangy flavor. If you don’t have plum syrup, you can use a mixture of sugar and water in a 1:1 ratio.

Drain the soaked seaweed strips thoroughly using a sieve. It’s important to squeeze out as much water as possible, as remaining moisture can dilute the seasoning.

Combine all the prepared ingredients and seasonings in the bowl. Gently toss and mix everything together with your hands, ensuring the seasoning is evenly distributed. Be careful not to mix too vigorously, as this can break the seaweed strips.
