Main Ingredients
  • 500g fresh sea mustard (Toss), cleaned
  • 20g green onion (about 1/5 of a stalk)

Seasoning Ingredients
  • 1 Tbsp anchovy sauce (Myeolchi Aekjeot)
  • 1 Tbsp fermented seafood soy sauce (Eogan-jang) (or regular soy sauce)
  • 1/2 Tbsp minced garlic
  • 2 Tbsp perilla oil (Deulgireum)
  • 1 Tbsp sesame seeds (roasted or ground)

For Blanching Sea Mustard
  • 1 Tbsp coarse salt

Cooking Instructions

Step 1

Thoroughly wash the fresh sea mustard multiple times under running water to remove any dirt or debris. Scrape off or trim any reddish parts or rough bits. Drain the water well using a sieve.

Step 2

In a large pot, bring plenty of water to a rolling boil over high heat, adding 1 tablespoon of coarse salt. Once boiling, add the cleaned sea mustard and blanch for about 3 minutes. Be careful not to overcook it, as preserving its crisp texture is key.

Step 3

Immediately rinse the blanched sea mustard under cold running water to cool it down. This step helps maintain its crunchy texture and keeps it fresh. After rinsing, drain the water thoroughly using a sieve again.

Step 4

Transfer the drained sea mustard to a cutting board and cut it into bite-sized pieces, about 3-4 cm long. Cutting it to an appropriate length based on its thickness will help the seasoning penetrate better, making it more flavorful.

Step 5

Wash the green onion and finely chop it into small pieces, suitable for the amount of sea mustard you have. Chopping it thinly ensures it blends well with the sea mustard.

Step 6

In a mixing bowl, combine the prepared sea mustard and chopped green onion. Add all the seasoning ingredients (anchovy sauce, fermented seafood soy sauce, minced garlic, perilla oil, and sesame seeds). Gently toss everything together with your hands until the seasoning is evenly distributed. Taste and adjust the seasoning if needed by adding a little more sauce or soy sauce.

Step 7
